Frozen Coffee Cookie Sandwiches

These easy frozen coffee cookie sandwiches are a fun and simple way to enjoy your favorite drink flavors as a dessert. It's only 3 ingredients and is just like eating coffee ice cream sandwiches. Yummy! Coffee has always been my favorite kind of ice cream and this is a no fuss and sweet way to enjoy it! It is quick to make and perfect for this summer heat. Enjoy!! via @skinnydesserts

Frozen Coffee Cookie Sandwiches

 These 3 ingredients frozen coffee cookie sandwiches are so easy to make and oh are they delicious! Tastes like coffee ice cream. Make some soon, you’ll know what I’m talking about after just one bite. Enjoy!

 

I don’t know about you but, my favorite flavor of ice cream has always been coffee.

Even as a kid, I loved that flavor and probably because my mom Ruthie always ordered that when we went out for ice cream.

  Back in the “olden days” there were only two ice cream places around where I grew up on Long Island, New York. Carvel and Baskin Robbins.

Years later Friendly’s opened up and they also carried coffee flavor.

Baskin Robbins were called 31 flavors years ago. But, coffee was right under vanilla, chocolate and strawberry. So, that’s my history with coffee ice cream. 

This frozen cookie sandwich is so incredible delicious and brings me right back to my childhood and I don’t have to leave the house to enjoy my beloved coffee ice cream. And now, in a frozen ice cream sandwich. 

 

Since being on a diet or at least watching what I eat to stay on track, I try to come up with creative ways of making a favorite dessert with less fat and calories.

If you are like me, you always have Cool Whip in your freezer and fridge. It’s a must when on Weight Watchers that’s for sure. It’s the greatest in my book. Nowadays they have the classic/regular, lite, fat free, sugar free and even flavored Cool Whip once in a while.

Sometimes markets carry cookies and cream or chocolate brownie, which my son can just eat frozen out of the freezer. It seriously tastes like chocolate ice cream with pieces of brownie in it.

I don’t usually make recipes with the flavor Cool Whip products because not everyone can find them in each state. So, by adding in ingredients that are right in most of our pantries and refrigerators, there’s still lots of great varieties for yummy dessert treats to make. 

This recipe you are about to read below is so simple with only three ingredients. I’m guessing you know what the star ingredient is to make these “coffee” ice cream sandwiches is. Well, all three ingredients are special because they all make up a perfect frozen coffee ice cream sandwich. 

 

 

So you coffee lovers, check this easy-peasy recipe out and enjoy every chilled, creamy, crunchy bite! 

 

Frozen Coffee Cookie Sandwiches

Yields: 8 filled square cookie sandwiches – 1 per serving

Nutrition: calories 74,  fat 1.5 g, sat fat 0.2 g, carbs 13 g, sugars 4.5 g, fiber 0.5 g, protein 1 g

WW Smart Points: 3 – WW Points Plus: 2 – WW Personal Points: 3

 

What you’ll need to make these delicious frozen coffee cookie sandwiches…

 

Ingredients:

  • 8 whole graham crackers, cut in half to make 16 squares
  • 1 cup Cool Whip or any frozen whipped topping, thawed, I used free for this recipe, but any will work 
  • 1 tsp or more for a deeper flavor, instant coffee mixed with 1/2 tsp or more if needed, water (decaf also works)

 

 

 

Here’s how to make these frozen gems…

Directions: 

  1. Lay graham crackers fat on a small cookie sheet or paper plate. 
  2. Mix together the small amount of instant coffee and water. 
  3. Pour the coffee into the 1 cup of whipped topping and mix gently. 
  4. Dollop about 2 tbsp mixture over 4 of the squares. Gently press down another square over top. 
  5. Place in freezer for about 30 minutes, take out and wrap each filled cookie sandwich in plastic wrap. Place wrapped sandwiches into a ziploc bag, place back in freezer for about 2 to 3 hours. (It’s worth the wait)
  6. Take out and enjoy your yummy coffee, guilt free ” ice cream sandwich” 
  7. Note, sandwiches taste best when eaten within 3 to 4 days in freezer.

If you are a coffee ice cream fan, you are sure to love these delicious and guilt free frozen coffee sandwich cookies.

Ingredients
