Frozen Cinnamon Mocha Cups
These little gems taste like a frozen cup of coffee with a hint of cinnamon and chocolate. If you are a fan of ice coffee then you are sure to love these little mocha cups that are a guilt free treat.
For years and years I have been making so many of these little frozen treats as a way to stay on a diet and still enjoy a treat once in a while.
Well, with these little cups, I can have one or two everyday!
Made so simply with one of my favorite frozen ingredient, Cool Whip.
In this recipe I used Cool Whip Lite. It saved me a few calorie and still had the richness of any tasting decadent dessert.
I also used one of the International Instant Coffees that pack a whole lot of flavor in just one tablespoon. You can easily find these right next to the instant coffee in your market or even Target and Walmart. If you decide not to use one of these then use regular instant coffee but if they are crystals, mix with just a teaspoon of water to dissolve a bit.
Either way, you are going to have a great tasting frozen coffee treat that is sure to become a favorite once you take your first bite. Check out the simple recipe below.

Frozen Cinnamon Mocha Cups
Yields: 12 cups
Nutrition: calories 45, fat 1.9 g, sat fat 1.5 g, carbs 7.3 g, sugar 2.1 g, fiber 0.2 g, protein 0.4 g

Ingredients:
- 1 3/4 cups Cool Whip, I used Lite for this recipe
- 1 Jell-O sugar free pudding cup (60 calories) in chocolate, chocolate swirl or your favorite flavor
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1 tbsp Maxwell House International Cafe French Vanilla, mocha, chocolate regular or sugar free, or any instant coffee of choice (Great alone for a soothing cup of flavored coffee)
- 6 tbsp graham cracker crumbs
- 12 white chocolate chips for top of each up
Directions:
- Have a mini cupcake pan with foil or paper liners ready for your mixture.
- In a large mixing bowl, combine together all the ingredients except the graham cracker crumbs. Best if you use a wire whisk to mix.
- Sprinkle 2 tablespoons of the crumbs in each of the 12 mini cups. Try to divide crumbs evenly between the 12 cupcake liners.
- With a mini ice-cream/cookie scoop, or teaspoon, fill each cup with pudding mixture.
- Sprinkle the rest of the crumbs over the top of the 12 cups and add 1 white chocolate chip on top for decoration. Freeze for until set at least 2 hours.
