These delicious egg bites start with large eggs that I blend with cottage cheese until smooth. Then, I add gruyere cheese and bacon. I pour the mixture into muffin cups, top with more bacon, and bake until slightly browned. They only take a few minutes from start to finish, and they’re loaded with classic breakfast flavor.

  • 5 large eggs
  • 1 cup cottage cheese (4% or 2%)
  • 1 cup finely shredded gruyere cheese
  • 4 strips of well done bacon, cut into small pieces or crumbled
  • 1/8 to 1/4 teaspoon salt. I used coarse sea salt
  • 1/4 teaspoon black pepper
  • Cooking spray

How to Make Copycat Starbucks Egg Bites

Making these egg bites is a breeze. It only takes a few minutes and a few simple steps from start to finish, and it’s so simple even beginners will have no problems with it!

  1. Preheat the oven to 350 degrees and spray a muffin pan with non-stick cooking spray or use silicone liners sprayed with nonstick spray. (I put the silicone liners into a muffin pan.
  2. Blend the eggs and cottage cheese in a blender or mini chopper until combined and smooth.
  3. Add the salt, pepper, and shredded gruyere and blend again until just combined. The gruyere cheese should still have some texture.
  4. Pour the mixture into a bowl or glass measuring cup that has a spout and mix in the bacon, saving a few pieces for topping the bites.
  5. If using a measuring cup with a spout, pour into the muffin cups 3/4 full. If the batter is in a bowl, use a large spoon or small ladle and fill the muffin cups 3/4 full. Top with more bacon pieces and bake for 14 to 20 minutes until a toothpick inserted into the center comes out clean and the tops are slightly browned. Start checking after 14 minutes.

  • You can swap out the bacon and use turkey bacon or even vegan bacon.
  • Shredded Swiss or Jarlsberg work in place of gruyere.
