Bagel Breakfast Casserole – This easy-peasy casserole recipe is a family favorite for years and years. Everyone loves it! It’s a very versatile recipe too. Check it out. You are sure to love it too!

My family loves when I make this casserole for breakfast and brunch but, they also love it for dinner. Every so often I make breakfast recipes for dinner. It’s a tradition I kept up from my mom Ruthie. My sister and niece also do the same with their kids. Even my hubby loves a change now and again. Some nights it’s pancakes and french toast or eggs with hash brown potatoes. This bagel breakfast casserole is their favorite though. If you haven’t done breakfast for dinner, try it out sometime. You family will probably like it like mine does. Now, getting back to this recipe, first of all, I guess you could say it’s a combo between a casserole and bread pudding. The bagels give this dish a great texture and if you want to use bagels other than plain, you’re in for a real treat. Try some plain and some everything. A taste sensation!  Remember when I said it was a versatile reicpe? That’s because there is bacon and sausage in the casserole. For a change up, I sometimes use turkey bacon and turkey sausage. Then, when we are in a vegetarian mood, I use vegan bacon and sausage. Hey, I know what you are thinking, but don’t knock it until you try some of the brands. They are pretty good. Especially when you add it to eggs and lots of cheese. So, why don’t you give this recipe a try, it really is delicious. 

Bagel Breakfast Casserole

Yields: 9 to 12 servings

 

Ingredients:

  • 6 to 8 bagels, cut into cubes, for this casserole I used 6 plain and 2 everything
  • 1 pound bacon, cooked and diced
  • 1 pound ground sausage, cooked and drained
  • 12 to 14 eggs
  • 1 cup half and half
  • 12 ounces shredded cheddar cheese
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 3/4 tsp sea salt
  • 3/4 to 1 tsp ground black pepper
  • parsley or chives for garnish, this is optional

 

 

 

 

 

 Directions:

  1. Preheat oven to 350 degrees. Spray a 9 x 13 inch baking dish with cooking spray. Set aside. 
  2. In a large mixing bowl, whisk eggs until completely combined. Add in half and half. Whisk again to incorporate. 
  3. Add in seasonings. Whisk again until all is well mixed in. Add in half of the shredded cheese and mix well. 
  4. Now, toss in the cooked bacon and sausage. Mix to incorporate. 
  5. Lay the cubed bagels in the bottom of the baking dish. Spread them out. 
  6. Pour the egg mixture over the bagels. Gently pat down with a wooden spoon or rubber spatula. Sprinkle the remaining shredded cheese over top. 
  7. Cover with foil and bake for 25 minutes. Take off foil, turn the dish around and bake another 20 minutes or until top has browned and casserole is not soft in the middle. 
  8. When finished, remove from oven and let cool about 10 to 15 minutes then serve.
