
These Copycat Starbucks Egg Bites are a protein-packed start to the day that everyone in the family will love. Eggs, cottage and gruyere cheese, and bacon create a hearty, handheld breakfast that keeps us full all the way until lunchtime.
1. Preheat the oven to 350 degrees and spray a muffin pan with non-stick cooking spray or use silicone liners sprayed with nonstick spray. (I put the silicone liners into a muffin pan. 2. Blend the eggs and cottage cheese in a blender or mini chopper until combined and smooth. Add the salt, pepper, and shredded gruyere and blend again until just combined. The gruyere cheese should still have some texture. 3. Pour the mixture into a bowl or glass measuring cup that has a spout and mix in the bacon, saving a few pieces for topping the bites. If using a measuring cup with a spout, pour into the muffin cups 3/4 full. If the batter is in a bowl, use a large spoon or small ladle and fill the muffin cups 3/4 full. 4. Top with more bacon pieces and bake for 14 to 20 minutes until a toothpick inserted into the center comes out clean and the tops are slightly browned. Start checking after 14 minutes. Enjoy!
