Sugar Free Keto Candied Pecans

Candied nuts are one of my favorite snacks.
They have the best of sweet and salty. Creamy and crunchy all at the same time.
You know what I’m talking about.
The only problem is, most of the time when you purchase them in the markets or in a specialty shop they are loaded with sugar, lots and lots of sugar.
Even at restaurants that serve them on salads, they are coated with sugar and there goes the healthy salad you just ordered.
While so many of us are trying to eat healthy, we don’t realize how much sugar is in so many prepared food. The foods we buy and love to eat. Like candied nuts
Being on a low sugar diet myself, which includes a lower carb diet, I knew there had to be a way to make a favorite snack of mine with less sugar or no sugar at all.
After many trials and errors,this was the winning recipe. As a result, I got a 2 thumbs up from my son and hubby.
They loved these candied nuts as much as I did. My son said they were crunchy but still kind of soft on the inside which he really liked. My husband said they were great and the next time I make a salad could I please put some on.
Then, for another test, we had friends over and I put these down on the coffee table when they first arrived. We didn’t say a word about the nuts. They had no idea I replaced the sugar laden nuts with my sugar free homemade version.
Seriously, within 10 minutes between the six of us, all the nuts were gone. I guess everyone loved them.
I think they thought I bought them until I told them that they were sugar free and low carb. Both my girlfriends asked me for the recipe on the spot.
Now both friends make them easily at home anytime they want and so can you.

Sugar Free Keto Candied Pecans
Yields: about 4 to 6 servings
Note: recipe can be easily doubled or tripled
What you’ll need to make some sugar free keto candied pecans…
Ingredients:
- 2 cups raw whole pecans
- ¼ cup unsalted butter
- ½ tsp vanilla extract
- ¼ cup sugar alternative, I used a stevia blend, Swerve, Splenda all work, use your favorite
- ½ tsp ground cinnamon
- ¼ to 1/2 tsp sea or kosher salt
- ¼ tsp cayenne pepper, this is optional for a kick of spicy heat
Here’s how to make some…
Directions:
- Preheat oven to 325 degrees. Lay a piece of parchment paper on a rimmed cookie sheet and set aside.
- Melt butter in a medium saucepan. Take off heat. Add in vanilla, cinnamon, salt and sugar alternative. Mix to combine.

Toss the pecans into the mixture and mix gently with a small rubber spatula until all the pecans are coated. Try not to break any of the pecans.
- Pour out onto prepared pan. Spread out so there’s no overlapping.
- Bake for about 10 to 15 minutes. Check after 9 or 10 minutes. Nuts can burn very quickly. Mine took about 14 minutes. If there is still butter that’s runny, they are not done yet. Keep checking.
- Take out when done, let cool in the pan completely. The nuts will harden up in time. Break up and serve.
