Mini Potato Skins

 These mini potato skins are fun and easy to make. Perfect for any gathering. Grab some little red potatoes and start stuffing. Everyone will love them and so will you!

 

Super Bowl is next week and I have been gathering up some recipes to make for the big game.

 

It’s just the four of us this year. I still wanted  to put out some new recipes along with the all time favorites that were served when we had a bunch of friends. If there’s leftovers my son Josh will  take care of that by the next day. 

 

That’s what got me to thinking, there is already a recipe for Twice Baked Potato on my blog. I made those a bunch of times. It was time for another recipe that with potatoes in it.

 

 I wanted a more finger food, mini potato skins to put up. Well, here it is. With only 4 basic ingredients, you have a delicious and fun pick up, finger food the kids and adults will adore.

 

You’ll see below, the optional toppings such as sour cream, green onions or top with your pick of favorite toppings.

 

Anyway you top these they are going to be just right and a big hit with everyone.

Mini Potato Skins

Yields: 20 servings, 2 each

WHAT ARE THE BASIC INGREDIENTS THAT GO INTO MAKING THESE MINI POTATO SKINS?

 

Here are the four basic ingredients with a few toppings you may like…

  • 20 small red potatoes, rinsed and scrubbed if needed
  • 3/4 cup grated cheddar cheese, I used mild
  • 1/2 cup real bacon bits (this is the brand I used)
  • 1 tbsp unsalted butter
  • sour cream or plain yogurt, and, chopped green onions, this is optional for topping

 

HOW ARE THESE PREPARED AND IS THE AN EASY ONE?

 

You best these are easy and simple to prepare. Four steps to potato deliciousness…

  1. Preheat oven to 400 degrees. Line a rimmed cookie sheet with parchment paper or foil. Set aside. 
  2. Place washed potatoes on the bottom of a large pot. Fill with cold water and bring to a boil. Add a dash of salt. Cook until potatoes are fork tender. 
  3. When potatoes are cool enough to handle, cut in half. Gently scoop out inside of potatoes and place in a mixing bowl. Add  butter and mix around. Add 1/2 cup cheese and bacon bits. Mix gently to combine. 
  4. Spoon mixture into each potato skin. Place on prepared cookie sheet and bake for about 10 minutes. Sprinkle remaining 1/4 cup grated cheese on top of each filled potato skin. Top with sour cream and chopped green onions if using.

Ingredients
