Easy Avocado Zucchini Roll Ups – This beautiful and colorful dish is so simple to prepare and is healthy and delicious. Enjoy as an appetizer and for a light lunch. A great low carb recipe too!

 

It’s nice when you come up with a recipe that’s healthy and tastes fabulous. This one is all about great taste and texture. From the simple 4 Ingredient Olive Oil Guacamole to the crunchiness of the naturally sweet veggies. I serve this as an appetizer for guests and love this for a light lunch. Great to bring for potluck dinners, picnics, and barbecues.  Make some soon, you and everyone who tastes this recipe will love it! 

Easy Avocado Zucchini Roll Ups

Yields: 6 servings

nutrition per roll up: cal 99. 1, fat 9 g, carbs 5.1 g, fiber 2.8 g

 

Ingredients:

  • 1 red bell pepper cut into thin strips
  • 1 yellow bell pepper cut into thin strips
  • 1 medium zucchini sliced into six long thin strips
  •  about 6 tbsp guacamole dip

 

 

 

 

Directions:

  1. Slice one medium zucchini into six long thin strips.
  2. Roll each of the zucchini strips into a circle, and secure them closed with a toothpick.
  3. Place about one tablespoon of guacamole dip into the center of each of the zucchini circles.
  4. Poke each circle with thinly sliced peppers. 
  5. Leftover peppers can be used with leftover dip. That’s it! Fun to make and delicious. 
  6. Should be eaten same day as prepared.
