 Basic Key Lime Bars

 If you are a fan of key lime pie, you are sure to love these basic key lime bars. A simple basic recipe that’s easy to follow and comes out tasting fabulous!

First things first…If you can’t find Key Limes, no worries. You can substitute a regular (Persian) lime in it’s place.

If you ever wanted to know the difference between the two limes, I will explain it briefly right here.

Both are used in cooking, baking, and dressings.

The Key Limes are usually picked when green but, they become a yellowish/green color when ripened.

They are also smaller in size, the rind is thinner and have many more seeds in them with a higher acidity and a bolder aroma.

So, if you can find them in your market or a fruit stand, pick some up and bake a batch of these beauties.

These basic key lime bars are really yummy! 

Best Basic Key Lime Bars 

Yields: 12 to 18 bars

What’s needed to make a batch of these basic key lime bars?

Ingredients:

For the crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all purpose flour
  • 1/4 tsp fine sea or kosher salt

For the filling:

  • 4 large eggs, lightly beaten
  • 2 cups granulated sugar
  • 6 level tbsp all purpose flour
  • 1/4 cup plus 1 to 2 tbsp  fresh key lime juice (Regular limes work too)
  • 4 tbsp key lime zest
  • 1/2 to 1 cup powdered sugar for sprinkling on top of finished bars
  • key lime slices and zest (Regular limes work too) for garnish
  • 1/8 tsp sea or kosher salt

Filling has topped the crust and now ready to bake these yummy gems up

How are the key lime bars made?

Directions:

For crust:

  1. Preheat oven to 350 degrees, line a 9×13 baking dish with parchment paper. Set aside.
  2. In a large mixing bowl, using a hand or stand mixer beat the butter and powder sugar until fluffy.
  3. Gradually add in the flour and salt until combined.
  4. Press dough into prepared pan and bake for 23 to 25 minutes. Allow to cool.

For filling:

  1. In a large mixing bowl, whisk the eggs and sugar until combined and fluffy.
  2. Whisk in flour and salt until combined.
  3. Mix together Key Lime juice and zest. Pour into filling. Whisk again until combined.
  4. Pour filling over cooled crust and bake 25-30 minutes or until the center has set.
  5. Allow to cool before dusting with powder sugar and cutting into bars. Refrigerate for about 30 minutes if you want the bars cold. Store in a sealed container in fridge up to 3 days.
