These keto chocolate chip muffins/cupcakes are very easy to throw together anytime for a healthy low carb snack, breakfast, and dessert. They taste rich, buttery and totally decadent while using basic ingredients. Bake a batch soon and enjoy!

 

The new craze these days is eating the Keto way.

 

I happen to love many Keto recipes I’ve been seeing on the internet.

 

My son Josh and I make and bake Keto on a regular basis.

 

These muffins/cupcakes have become a staple in my home.

 

My son now knows how to make a batch up on his own. He’s 14 and a great chef in training as I call him.

 

I grab one with my tea or coffee in the morning and he packs one in his lunch bag.

 

Even my hubby Alan likes these, he grabs two at a time and throws them in his briefcase.

 

He told me he has one in the morning and one late afternoon when he’s craving something sweet.

 

Even though there’s no sugar in these, they have just the right amount of sweetness without being too sweet and of course are low carb and Keto.

 

 Hey, I’m not saying they don’t have fat because they do, Keto and low carb foods usually do. But, I would rather have fat in a healthy muffin or cupcake  and less sugar and carbs by far.  

Bet you and everyone in your house will love these like we do.

 

Try this easy-peasy recipe. It’s so yummy! 

 

Keto Chocolate Chip Muffins/Cupcakes

Yields: 12 muffins

 

WHAT ARE THE CALORIES AND CARBS PER SERVING ALONG WITH THE SUGARS AND FAT CONTENT?

Here is the nutritional content: calories, 127, fat 12 g, carbs 3.4 g, sugars, less than 1 g

 

WHAT ARE THE INGREDIENTS THAT GO INTO THIS KETO, LOW CARB RECIPE?

Here are the everyday ingredients:

  • 1/2 cup almond milk
  • 3 eggs
  • 1 teaspoon of vanilla
  • 1 1/4 cups  almond flour
  • 1/4  cup Swerve sugar free sweetener or no calorie sweetener of choice
  • 2 tsp baking powder
  • 1/4 tsp fine sea or kosher salt
  • 1/4 cup unsalted butter or coconut oil, melted and cooled
  • 1/2 a cup grated/chopped or chips unsweetened chocolate or your choice of sugar free chocolate chips, I use Lily’s or Pascha unsweetened chocolate chips found on Amazon or in Whole Foods and now many other grocery stores
  • coconut or butter cooking spray

 

 

HOW ARE THESE DELICIOUS LOOKING MUFFINS/CUPCAKES PREPARED?

Here’s the simple directions to make these gems:

  1. Preheat oven to 400 degrees
  2. Start by beating eggs, milk, and vanilla together.
  3. Add in remaining ingredients, except chocolate
  4. Beat with hand mixer until well blended.
  5. Add in chocolate chips and stir by hand.
  6. Place cupcake liners in cupcake pan, spray lightly with cooking spray such as coconut spray and fill 3/4 of the way full.
  7. Bake for about 15 minutes or until toothpick comes out clean or with dry crumbs and muffins should spring back when touched lightly.
  8. While muffins are still warm, add a few more chocolate chips on top.
  9. Let cool in pan on wire rack for about 15 to 20 minutes. After, invert onto wire rack to finish cooling.

  • extra chips, chunks for topping, optional

Instructions

  1. 1.Start by beating eggs, milk, and vanilla together.

    2.Add in remaining ingredients, except chocolate

    3.Beat with hand mixer until well blended.

    4.Add in chocolate chips and stir by hand.

    5.Place cupcake liners in cupcake pan, spray lightly with cooking spray such as coconut spray and fill 3/4 of the way full.

    6.Bake at 400 degrees for 15 minutes, or until toothpick comes out clean or with dry crumbs and muffins should spring back when touched lightly.

    7.While muffins are still warm, add a few chocolate chips on top,this is optional. 

    8. Let cool.
