Every now and then, there’s a recipe that stands out with family and friends to the point they continue to ask for that certain recipe to be served.
This delicious casserole for cheesy scalloped potatoes is that one recipe.
I started to make this about a year ago when my son Josh asked me if I would make potatoes with dinner.
Usually the potato sides are mashed, baked, and oven fries.
There had to be another recipe to be made with potatoes that the whole family will enjoy that’s got some more jazz to it.
There was a new package of cheddar cheese in the fridge so that got me thinking.
My mom Ruthie used to make a scalloped potato recipe when I was growing up. Since I have so many of her recipes packed away in a big boxes, it was time to look for this one particular recipe.
I was shocked it was sitting right on top of the second stack of recipes in the second box. Yippee!
After the casserole was done, I tasted it before it was served to the family, it brought back such fond memories of my mom’s cooking.
To say the least, the family loved this dish and now it’s always served at every holiday meal and it’s been brought to many potluck dinners with friends and extended family.
Give this simple and easy recipe a go. It’s beyond yummy!
Cheesy Scalloped Potatoes
Yields: about 8 servings
Ingredients:
- 4 russet potatoes, thinly sliced
- 2 cups shredded cheddar cheese, I used mild
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 tsp coarse sea or kosher salt
- 1/2 tsp ground black pepper
Directions:
- Preheat oven to 400 degrees. Spray a 9 x 13 casserole dish with cooking spray and set aside.
- Layer the sliced potatoes in the casserole dish. (See photo)
- In a medium saucepan, melt butter over low to medium heat. Mix in flour. Stir constantly for one minute. Slowly stir in milk and cream. Cook until mixture has thickened. Add salt and pepper and stir.
- Stir in cheese and continue stirring until melted.
- Carefully pour cheese sauce over potatoes. Cover the dish with aluminum foil.
- Bake 1 hour. After the hour, remove foil and bake for another 20-30 minutes. The casserole will probably bubble a little and the potatoes will brown on top.
- Let cool on wire rack for just about 5 to 10 minutes. Then, serve these cheesy gems!
