 Easy Caramel Popcorn

 A fun and yummy snack to munch on with family and friends. My family requests this frequently and I’m happy to make it for them. Try this easy caramel popcorn recipe and enjoy!

 

This super easy recipe is one I make often since my family is always requesting it.

I always have air popped popcorn bags in my pantry along with the other ingredients needed to make this delicious recipe.  

The easy recipe takes  just a few minutes and you have a most fun and yummy treat. 

I like taking this with us when going on a road trip.

Keeps everyone happy.

Great for packing into nice goody bags or mason jars for a holiday edible gift idea too.

 Easy Caramel Popcorn

Yields: about 4 servings

What you’ll need to make easy caramel popcorn…

 

Ingredients:

  • 2 bags air popped popcorn — when popped, remove 1 cup of the popcorn and enjoy it while you are preparing the rest of the recipe
  • 1 cup light brown sugar, packed
  • 1/2 cup light corn syrup
  • 1/4 cup butter
  • 1/4 tsp sea or kosher salt
  • 1/2 tsp baking soda
  • 3/4 tsp vanilla extract

How to make a batch…


Directions
:

  1. Preheat oven to 250 degrees
  2. Prepare popcorn using the directions on the bag. Line a cookie sheet with non stick foil and spray with cooking spray. Inspect the popcorn and remove any un-popped kernels. Place in the preheated oven.
  3. In a medium saucepan, combine the brown sugar, corn syrup, butter and salt. Cook over medium heat. Bring to a boil and stir continually (we don’t want this to burn).
  4. After it boils, turn the heat down to low and do not stir for 3-5 minutes. You may want to take a heat proof rubber spatula and scrape down the sides of the saucepan if needed.
  5. Remove from the heat, stir in the vanilla extract and baking soda.
  6. Pour the mixture over the popcorn and toss to coat entirely.
  7. Bake about 35-50 minutes, stirring every 10 to 15 minutes. This is an important step so the popcorn does not burn.
  8. When finished, cool completely. You may want to break apart some of the larger pieces before serving
