Simple Steps To Grill Thinly Sliced Veggies
Ingredients:
- 1 eggplant
- 2 small yellow squash
- 1 zucchini
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- sea salt & pepper to taste
Directions:
- Heat grill to 400 degree
- Line grill with foil to keep vegetables from sliding through the grates.
- Cut vegetables lengthwise if using on a sandwich, or any desired uniform method.
- In a large bowl mix olive oil and vinegar, then toss in vegetable to coat evenly.
Roast vegetables turning often until edges are browned and vegetables are tender.
