It does not have to be Autumn when the pumpkins are out in all the stores and pumpkin recipes are all over the internet and in magazines. I make pumpkin recipes both sweet and savory year round. 

This is a wonderful recipe that is fast and easy to put together any day of the week.

Great for dessert on busy weeknights or fancy enough for company. Anyone you serve this to will be impressed. You’ll know that it’s one of the easiest recipes you have. 

 The recipe yields 2 servings but it is easy to double or even triple the ingredients (as I’m sure you will want to make more after you try it!).

Using canned pumpkin makes this recipe even faster and easier if you were to use a fresh pumpkin. The canned pumpkin is delicious and has good nutrients too.

What’s in this recipe for quick pumpkin mousse?

Here are the simple Ingredients:

  • 3/4 – 1 cup cold skim or 1% milk
  • 1/3 cup canned pumpkin, just pumpkin
  • 2 1/2 tbsp vanilla instant pudding (powdered mix, unprepared) I used sugar free
  • 1/2 cup plus 2 heaping tbsp Cool Whip, thawed, I used Cool Whip Free
  • 1/4 tsp pumpkin pie spice
  •  1/4 tsp vanilla extract
  • 1/2 tsp cinnamon
  • colored sprinkles (optional)

 

 

 

How is this quick and easy recipe made?

Here’s The Quick and Easy Directions:

  1. Combine the pumpkin and the cold milk in a medium to large size bowl.
  2. Add the pudding mix to the pumpkin and skim milk and whisk for about 2 minutes until the mixture starts to slightly thicken. Add the spices, whisk again just until they are combined.
  3. Let mixture rest for 2-5 minutes. If needed for consistency, add the last 1/4 cup milk.
  4. Fold in the Cool Whip.
  5. Chill mousse in the fridge for about 1/2 hour.
  6. Remove mousse from the fridge and mix gently. Spoon the mousse into a dessert glass and top with Cool whip and sprinkles.
