Frozen Peanut Butter Cookie Sandwiches

You only need 3 ingredients to make creamy, crunchy, delicious frozen peanut butter cookie sandwiches. A family favorite around my home and bet will be a favorite around yours too. Enjoy!

 

Love peanut butter ice cream? Well, if so, check these yummy peanut butter frozen cookie sandwiches out.

I make these for my hubby and kids regularly since it’s easy and I know they love these so much.

Great on a warm evening or just about anytime for that matter. We have these in the middle of winter just because they taste so good. 

Takes only a couple minutes to prepare, then freeze for a couple of hours. It’s that easy-peasy of a recipe.

These frozen cookie sandwiches are great with smooth or chunky peanut butter.

Sometimes you may be in the mood for a little crunch in your peanut butter cookie sandwich and other times you want it creamy.

Both work great. Switch off for a change and change the crackers too. Use regular, chocolate or cinnamon grahams once in a while. 

  Change around for a nice variation. Add some strawberry jam and you’re eating a frozen PB&J sandwich.

My son Josh likes it when I put bananas in the middle.  It all works and is so scrumptious.

Have fun with these, the kiddos will enjoy making these for themselves anytime.

No worries about putting the oven or stove on and there’s really no mess. 

Sometimes, I  have these waiting for my kids when the bus drops them off the bus. However, I usually make these all week long. 

The easy recipe can be doubled and tripled. Make as many as you like. This way you can grab two!

Frozen Peanut Butter Cookie Sandwiches

Yields 2 filled cookie sandwiches

Nutrition per sandwich: calories 94, fat 3.2 g, sat fat 1.1 g, fiber 1.4 g, protein 3.5  g, sugars 5.8 g, carbs 14.2 g

What you’ll need to make frozen peanut butter cookie sandwiches…

 

Ingredients:

  • 2 full sheets graham crackers, use regular graham crackers or chocolate!
  • 2 heaping tablespoons thawed whipped topping such as Cool Whip
  •  2 tablespoons powdered peanut butter mixed with water to make a thick spread

 

 

 

 

 

 

Only three simple steps…

Directions:

  1. In a small bowl mix whipped topping with the peanut butter.
  2. Break each cracker in half to make 4 squares. Spread the mixture over one cracker and place the other half on top gently. Some may squeeze out but not a big deal. It freezes up nicely.
  3. Wrap each sandwich in plastic wrap, freeze for a few hours until firm.

Ingredients

  • 2 tbsp powdered peanut butter powdered
  • 2 heaping tbsp whipped topping, I used Cool Whip Free
  • water to mix with peanut butter powder

Instructions

  1. 1.In a small bowl mix whipped topping with the peanut butter powder mixture.
