Sprinkle Pudding Cookies

 These sprinkle pudding cookies have been a favorite with my kids since I started baking them over 10 years ago. Bake a batch soon,  you’ll know why they love them so much after you take just one bite. Enjoy!

 

 

This is a cookie recipe that is very versatile.

You can add chocolate chips, nuts, dried fruit, you name it.

Or, eat them plain with sprinkles on top like in the photos.

The best part about these sprinkle pudding cookies are the texture. Soft and pillowy. That comes from the dry pudding mix. You can also, change around the pudding flavor. Chocolate works well and so does lemon and banana.

You can also add the sprinkles inside the batter for a funfetti cookie.

Seriously, the skies the limit! Go crazy and have fun with these.

Bake some with the kids. My kids always loved making these with me.

My daughter knows this recipe by heart and could probably bake them with her eyes closed. She has made them for her roommates in college and gave them out as gifts for the holidays.

Recipe note: Since the recipe is so simple with basic ingredients and measurements, it is easily doubled.

Yields: between 18 to 24 cookies depending how big or small you scoop them out

 

What goes into making these delicious sprinkle pudding cookies…

 

Here are the everyday ingredients to make these delicious cookies?

  •  unsalted butter, softened
  •  granulated sugar
  •  packed light brown sugar
  •  room temperature large or extra large egg
  • pure vanilla extract
  •  all purpose flour, make sure you spoon flour into the the measuring cups rather than dipping the measuring cups into the flour. Then, level with a butter knife for best measuring.
  •  instant vanilla pudding (dry mix only)
  •  baking soda, important to make sure baking soda is fresh, check date before using.
  •  kosher or sea salt
  • colored and chocolate sprinkles
  • mini chocolate chips

How do you make these pretty looking sprinkle pudding cookies…

 

Here are the simple and easy directions:

  1. Preheat oven to 350 degrees
  2. Line a cookie sheet with parchment paper.
  3. In a large mixing bowl using a hand held mixer or stand mixer, cream butter and sugars until combined. Add egg and vanilla extract. Add flour, pudding mix, baking soda and salt. Mix well to combine all ingredients.  Make sure you dig deep down to mix in all the wet and dry ingredients. Place in fridge for 5 minutes.
  4. With a small to medium cookie scoop, place dough 1 inch apart from each other. Press down on each cookie just slightly. Sprinkle your favorite sprinkles over each cookie. Bake about 10 minutes. Let cool on cookie sheet for 10 minutes before transferring to cooling rack.
