Baked Corn Flake Chicken Tenders

I have been making this recipe for so many years.
I actually started when I was a caterer in Atlanta. A lot of my parties would be family parties that included kids.
I had to come up with something that was a finger food but still had to be nourishing since it was the main entree for them.
These had to be baked and not fried, didn’t want anything greasy and the coating comes out so nice and crispy it didn’t even need to be fried.
The first time this recipe was served it was for a pretty large family party. The adults were grabbing at the tenders.
I had to tell the host this since I was afraid there wouldn’t be enough for the kiddos.
There were some other delicious dishes for the adults but, I guess we are all young at heart and the finger food was a real treat.
Anyway, now that I’m married 20 some odd years later, this is a staple for dinner at least once a week.
It’s also a staple for any gathering like game day.
Makes a perfect appetizer.
My kids always loved it when they were much younger along with my hubby.
It’s a great dish to bring for potluck dinners and also for picnics. Seriously everyone loves these simple chicken tenders.
Just a note, in the recipe below, I didn’t add any seasonings. We happen to like it just as it is. But, you can add salt and pepper to taste along with garlic and onion powder.
Now that my daughter is grown and living in her own apartment, she told me she still makes these for her friends and her boyfriend. She likes to add Cajun spices to the egg or corn flake crumbs or both depending on how spicy she wants them.

Baked Corn Flake Chicken Tenders
Yields: about 9 to 12 tenders in this recipe, this depends how small or large the tenders are
What you’ll need to make corn flake chicken tenders…
Ingredients:
- 12 ounce box corn flakes
- 1 pound chicken tenders
- 2 eggs
- 2 cups buttermilk
- salt, pepper to taste, optional
- seasoning of choice such as onion or garlic powder, this is optional
Here’s how to make this easy-peasy recipe for baked corn flake chicken tenders…
Directions:
- Preheat oven to 350 degrees. Line a rimmed cookie sheet with parchment paper or use a nonstick sheet pan that’s been sprayed with cooking spray. Set aside.
- Pour the box of corn flakes into a large Ziploc bag.
- Crush with a rolling pin or a small pot to a fine crumb. Set aside.
- In a large bowl, add buttermilk and then add the tenders. Let sit in fridge for up to 30 minutes.
- Take out of fridge after 30 minutes and put a few into the plastic bag. Move around to coat each tender. Take out and lay on prepared cookie sheet.
- Dip in the egg this time and put back into the corn flake bag to coat. Do this until all tenders are coated twice. Place all the tenders on prepared cookie sheet.
- Bake for 15-20 minutes or until tenders are 165 degrees or juices run clear.
- Plate and serve!
