Baked Chicken Parmesan Tenders and Pasta

 Chicken tenders is the way to go on busy weeknights. This Italian dinner is easy to prepare and oh so delicious. A family favorite. 

 

This easy recipe is great for a weeknight dinner. Since the tenders bake up so fast you will have a delicious meal ready for the family in no time at all. I used a bottled pasta sauce for this recipe along with packaged grated cheese. Taking shortcuts is the way to go on a busy weeknight. Give this recipe a try, it’s sure to be a winner with your family like it is with mine.

 Baked Chicken Parmesan Tenders and Pasta

Yields 4 servings

Ingredients:

  • 1 cup all purpose flour
  • 1 cup plain or Italian bread crumbs, you can use panko breadcrumbs too
  • 1/4 cup grated parmesan cheese
  • 1 1/4 to 1 1/2 Lb package raw chicken tenders
  • 1 large or extra large egg
  • 1 tbsp cold water
  • 1 jar pasta sauce, use your favorite brand
  • 1/2 to 3/4 cup grated mozzarella cheese
  • 2 tbsp grated parmesan cheese
  • 1 box pasta, use your favorite kind

 

 

 

 

 

 

 

 

 

 

Directions:

  1. Preheat oven to 400 degrees. Line a cookie sheet with foil and spray with cooking spray. Take chicken out of package and give a quick cold water rinse then pat dry with paper towels.
  2. In three shallow dishes place egg and water mixture, bread crumbs and 1/4 cup parmesan cheese, and flour in the third dish.
  3.  Coat chicken with flour; dip into egg mixture then bread crumb mixture. Place on cookie sheet.
  4. Bake 17 to 25 minutes, turning over once, until chicken is no longer pink in center. Add sauce over chicken and top with grated mozzarella. Place back in oven for just a few minutes to melt cheese. While chicken is baking, boil water and cook pasta as per directions on box.
  5. Drain pasta and put back in pot. Add sauce to pot and mix with pasta. Heat over low heat.
  6. Place pasta on a serving dish, layer with tenders. Sprinkle remaining 2 tablespoons of parmesan over tenders.
