Starbucks Chocolate Snack Cake

Here’s a quick and simple snack cake recipe from my dearest friend Regina that uses Starbucks coffee. Perfectly adds a rich bold chocolate flavor along with the buttermilk for the most wonderful silky texture.  Bake one of these moist and rich cake soon, you’ll love it like we do. Enjoy!

A message from Regina: A little confectioners sugar is all you need, but the same cake batter can be used as a layer cake with your own delectable frosting.  That is so true what Regina wrote. I have made this simple cake many times and it’s so rich with a deep chocolate flavor you really need nothing else. However, one time I did add a fluffy vanilla frosting on top for my husbands birthday cake. It certainty was a huge hit. This cake is total deliciousness!

 

 Starbucks Chocolate Snack Cake

Yields 12 to 16 pieces of cake

Ingredients:

  • 1 3/4 cups flour
  • 1 cups sugar
  • 3/4 cups unsweetened cocoa powder, plus 1 tbsp
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup hot Starbucks brewed coffee or a packet of Starbucks Italian Roast Via (instant coffee), let cool
  • 1 cup hot water
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 tsp chocolate extract
  • confectioners sugar, optional

 

Directions:

  1. Preheat oven to 350 degrees.  Prepare a 9″ x 13″ baking pan with butter/oil and 1 tbsp. cocoa powder.  Coat evenly and shake off extra cocoa powder.
  2. Mix the instant coffee with the 1 cup hot water.  Cool.
  3. Whisk flour, sugar, cocoa powder, baking soda, baking powder and salt in a large bowl.
  4. Add to the flour mixture: eggs, buttermilk, oil, chocolate extract, and coffee.  Beat for 2 minutes on medium speed. Pour the thin batter into the prepared pan.
  5. Bake for 30 to 40 minuted, or until toothpick inserted in the center of the cake comes out clean.  Cool completely.
  6. When served sprinkle confectioners sugar on top if you desire for a little extra sweetness. Enjoy!

  • 1 cup buttermilk
  • 1/2 cup vegetable oil such as canola, avocado, or grapeseed
  • 1 tsp chocolate extract
  • 1/2 tsp vanilla extract
  • confectioners sugar, optional

Instructions

  1. 1.Preheat oven to 350 degrees. Prepare a 9″ x 13″ baking pan with butter/oil and 1 tbsp. cocoa powder. Coat evenly and shake off extra cocoa powder.

    2. Pour one cup coffee into a measuring cup set aside to cool or mix the instant coffee with the 1 cup hot water. Cool.

    3.Whisk flour, sugar, cocoa powder, baking soda, baking powder and salt in a large bowl.

    4.Add to the flour mixture: eggs, buttermilk, oil, chocolate extract, and coffee. Beat for 2 minutes on medium speed. Pour the thin batter into the prepared pan.
