Sloppy Joe Tater Tot Casserole

 

 This delicious recipe has  4 basic ingredients. A simple and fun recipe the whole family will love. Great for a busy weeknight dinner and always a hit at potluck dinners.

 

This recipe is one my family requests often. Why wouldn’t it be? It’s got all the delicious ingredients that make up one great casserole. 

 

The ingredients are ones I most always have on hand for at least one or more recipes.

 

For a twist on an old favorite the Sloppy Joe Sandwich, give this a try by adding another old time favorite frozen tater tot potatoes to the mixture. The Tater Tots add a bit of crunch and added volume to the already tasty dish. Also from the tangy sauce of the Sloppy Joe sauce it’s a nice contrast by adding some saltiness. But, just enough, not too much.  

 

The casserole comes out so hearty and delicious. Always a family favorite and company as well. As I said before, this is a huge hit when brought to a potluck dinner. I think everyone goes in for this before anything else. I think it’s the tater tots that draws them in. 

 

Just a quick story… A few months ago, we went to a potluck dinner at a friends home. She asked me if I would bring a casserole and of course I said yes.

 

I doubled the recipe and made two casseroles. When we all put the food on the large table and everyone saw the Tater Tots on top, the kids grabbed that first and then the adults went to dig in too.

 

Happy to say it was a huge hit to say the least. It was all gone before the party was over. 

 

Just a note, sometimes I add in frozen mixed vegetables, chopped onion, chopped fresh parsley, and chopped green or red peppers for a nice variety. I like adding in some freshness and also a different texture brought in. 

 

 

Sloppy Joe Tater Tot Casserole

Yields: about 8 servings

 

Ingredients:

  • 1 1/2 to 2 pounds lean ground meat of choice, beef, chicken, or turkey all work well
  • 15.5 ounce can Sloppy Joe Sauce
  • 32 ounce bag frozen Tater Tots
  • 8 ounce package mild cheddar cheese
  • 1 small onion chopped, optional
  • 1/2 green or red pepper chopped, optional

 

 

 

Directions:

  1. Preheat oven to 400 degrees, spray a 9 x 13 casserole dish with cooking spray and set aside.
  2. In a large nonstick pan, spray the pan with cooking spray and add ground meat. Add onion and pepper if using. Cook until meat is completely cooked. Drain off any excess drippings.
  3. Pour in Sloppy Joe sauce and mix to combine well. 
  4. Spread out meat sauce in casserole dish. Sprinkle on cheddar cheese. 
  5. Layer the tots over the entire top. Put unused tots back in freezer.
  6. Bake for about 25 minutes. You will see the tots brown and may be bubbling a little. Take out of oven and let sit on cooling rack for just 5 minutes. Then, serve up!
