Instant Pot Chicken Bruschetta – If you are looking for a new and delicious recipe for your instant pot, you must give this easy-peasy recipe a try. Full of flavor and so delicious.

Recently I decided to purchase an instant pot. I was holding off because I really didn’t want to get another kitchen appliance that would sit on my counter and not be used after the first time. I was so happy that I made this purchase. I use my instant pot at least 3 times a week. Dinners are so easy now! The time saved and the way the recipe comes out is well worth the purchase. It’s good that the one I got is not crazy expensive. There’s no need to get the most expensive one. This one had all that I wanted for a fair price.  I’ll give you the link to the one I bought on Amazon and I really do love it.

This chicken dish is full of wonderful flavors and my whole family loved the way the chicken was prepared. One bowl, one instant pot and you are done. The chicken was tender and juicy and the bruschetta sauce is just divine. Enjoy this dish, it’s great for potluck dinners and company since it looks so fancy. But, we know it was a snap to make. Enjoy!

Instant Pot Chicken Bruschetta

Yields: 4 servings

Ingredients:

  • 4 to 5 large skinless, boneless chicken breasts
  • 2  minced garlic cloves
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 14 1/2 ounce can diced or chopped tomatoes
  • 1 tsp worcestershire sauce
  • 1/3 cup sherry or white grape juice, apple juice, water, or a mixture of water and juice
  • 1/2 tsp coarse sea or kosher salt
  • 1/2 tsp pepper
  • 2 tsp Italian seasoning

Directions:

  1. Combine the diced tomatoes, sherry or juice, Worcestershire sauce, balsamic vinegar, Italian seasoning, salt and pepper into a mixing bowl.
  2. Select saute on your Instant Pot and add the olive oil to the pot. Brown chicken in two batches on both sides.
  3. Remove chicken from pot and add garlic to the pot. Cook, stirring until soft, about 2-3 minutes.
  4. Return the chicken to the pot.
  5. Pour the tomato mixture over chicken.
  6. Cook at high pressure for 8 minutes. When cooking is complete, use a natural release to depressurize. That’s it!
  7. Serve over rice or noodles.
