The new dessert craze everyone is talking about is right here! The most simple and easy recipe for a loaf of bread. Colorful, festive, fun to make and oh so delicious.
Everyone is talking about this very popular new cake/bread which is called “Ice Cream Bread.” I couldn’t resist joining in on all the fun. Being a food blogger, it’s my job to keep up with the coolest new recipes streaming online. The original recipe for this Ice Cream Bread only requires two ingredients. It comes out delicious as is, but knowing how my family loves sweet treats, this needed just a little more sweetness for their finicky taste buds.
So, when I served this bread the first time to my family, each piece had to have a big scoop of vanilla ice cream sitting right next to a big slice. Even more ice cream you are thinking? In my house it seems it could never be enough ice cream and in cake form, a double delicious dessert. Was it an ice cream overload? Nah, it was amazing. We gobbled the bread up and my hubby and son went in for seconds. You can decide if you want the added sweetness or just want to try it the original way.
What exactly is ice cream Bread?
As I mentioned, Ice Cream Bread only requires two ingredients: your favorite (softened) flavor of ice cream and self-rising flour. I also added a little vanilla extract for good measure and Funfetti or rainbow sprinkles because, why not?
It’s basically quick bread that’s made with ice cream and self-rising flour and the result is glorious. This bread has funfetti sprinkles inside and is sprinkled with sprinkles, making it festive overload plus extra festive as well.
What kind of ice cream is best to make an ice cream bread and what flavors work well?
The most important thing you need to know for your ice cream bread to be a success is, you must use full fat ice cream. The diet, low fat brands really don’t give the bread the right texture.
Vanilla and chocolate always come out delicious. I have made one with butter pecan, that was pretty much amazing. The one thing to be careful with is if you use an ice cream with big chunks or chips or nuts, they will probably sink to the bottom of the pan and the chocolate may become like a fudge sauce, not that there’s anything wrong with that! The next one I’m trying is a mint or mint chocolate chip. And, homemade ice cream works wonders. As long as it’s not low fat or fat free.
Just a recipe note, this is very important, you must use self rising flour. The cake will not work using all purpose flour. You can make your own self rising flour with APF by adding 1 1/2 teaspoons baking powder, 1/4 teaspoon fine sea or kosher salt to 1 cup flour. Whisk until all combined. Do this for each cup of flour in the recipe.
When I tell you this is one delicious dessert, I’m being modest. It’s now our favorite dessert around here. The bread would make a great birthday cake, too. As you can see in the photos, it’s totally festive and happy looking. I think it would put a smile on anyone’s face you serve it to. 4 Ingredient Funfetti Ice Cream Bread
Yields: 8 to 10 slices
Ice cream quick bread ingredients:
- 2 cups ice cream, (almost melted) any flavor of choice, remember only full fat
- 1 1/4 cups self rising flour
- 1/4 cup granulated sugar
- 1/2 cup funfetti sprinkles
- optional -1 tsp vanilla extract
How to make funfetti ice cream:
- Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. Fold a piece of parchment paper over the sprayed pan and press down. You want to have the parchment paper hanging over each long side for easy lifting. Spray the parchment paper and set aside.
- In a large mixing bowl, stir ice cream until just about melted. Stir in self rising flour. Mix until combined completely. Add in sugar. Stir gently. Add in vanilla if using and stir again, gently. Toss in ¼ cup of the sprinkles. One more time, stir gently.
- Pour batter into the prepared pan and spread evenly with a rubber spatula. Toss on the remaining ¼ cup sprinkles all over top of batter.
- Bake in a preheated oven from 30 to 45 minutes (oven times may vary so check after 30 minutes) bread should bounce back when touched lightly and a toothpick comes out clean or with a few dry crumbs. Cool in a pan on a wire rack for at least 45 minutes. Invert cake onto wire rack and turn back over. Let cool completely before cutting.
