Simple Skillet Chicken Mozzarella

 For a delicious and easy chicken dinner, this recipe is one to check out. A family favorite around my home and maybe yours too. Enjoy!

Once in awhile when I find a dish that my family likes and is easy and simple to make, it becomes a weekly and set meal during the hectic weeknights. Nice when you can use the same skillet on the stove and in the oven so there is one less pan to clean afterwards.

This chicken dish is kind of like chicken parmesan but without the breading so, it’s lighter and still delectable. It’s seasoned and then sauteed in the skillet. Even the sauce is a shortcut method. You’ll see how easy this is to make for your family on a busy weeknight or even to bring for a potluck dinner. Serve over some pasta, rice, or vegetables such as sauteed spinach and your meal is ready to enjoy.

Simple Skillet Chicken Mozzarella

Yields: 4 servings

Ingredients:

  • 4 boneless, skinless chicken breast
  • 2 tbsp olive oil
  • 1 tsp garlic powder, plus 1/2 tsp for sauce
  • 1/2 tsp onion powder, plus 1/2 tsp for sauce
  • 1 tbsp Italian seasoning plus 1 tsp for sauce
  • 3/4 tsp sea or kosher salt
  • ½ tsp black pepper, plus 1/4 tsp for sauce
  • 1 cup grated Parmesan cheese
  • 28 ounce can petite diced or crushed tomatoes
  • 1 cup shredded mozzarella cheese, I used part skim

 

 

 

 

 

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Season chicken on both sides with garlic, onion, and Italian seasoning. Save the remaining for sauce.
  3. Place an oven-safe skillet  (I love this reasonably priced skillet, it’s large and can go into an oven up to 550 degrees) over medium-high heat. Add olive oil and heat until hot. Carefully add the chicken breasts to the skillet. Allow to brown on the first side, about 3 to 4 minutes, before flipping. This will keep chicken from sticking to pan.
  4. Top chicken breast with grated Parmesan cheese.
  5. Open can of tomatoes, Add in leftover seasonings. Stir gently.  Pour over chicken in skillet. Let cook for about 2 to 3 minutes to heat through.
  6. Now, add mozzarella cheese over each chicken breast.
  7. Place skillet in oven and cook for 20 minutes or until chicken reaches an internal temperature of 165 degrees and juices run clear.
  8. While chicken is in the oven, prepare pasta, rice or vegetables.
  9. Take out of oven and let rest in pan on a cooling rack for about 5 minutes. Serve over the pasta, rice or vegetables.
