I have been making these o bake nut butter bars since 2014.
I had just gotten my new Nikon camera and these were the first photos that were taken on the camera.
Sorry they are not so great.
I promise when I make these again, I’ll shoot some new and hopefully much nicer photos.
With all the practice over the years, they should come out better!
I had forgotten about this recipe and it has been in draft mode.
Since my son knows this recipe by heart,we never needed to look up the recipe and I forgot about posting the recipe.
Josh found it in draft. So, here it is up live to share with you all.
This is one of the easiest recipe you will make and also really delicious.
It’s a very versatile recipe, like I mentioned, use any nut or seed butter you want.
The cornflakes just work so well with the balance of sweet, salty, creamy, and crunchy.
You can change out the kind of chocolate too.
Sometimes they are made with milk chocolate and other times with semisweet and even bittersweet chocolate.
It all works for the perfect not bake bar.
Great for picnics, potluck dinners and the best after school snack.
Because you can swap around the butters, they would be a good snack for school as long as you make them with no-nut butters and one of the seed butters.
Put your own spin on these no bake bars. They’ll be great!

No Bake Nut Butter Corn Flake Bars
Ingredients
- 3 cups cornflakes, crunched up place the cereal in a ziplock bag and roll with a rolling pin or a heavy pot and lightly smash until you have crunched up cornflakes.
- 14 tbsp crunchy peanut butter
- 1/3 cup plus 1 tbsp granulated sugar, I used superfine
- 1/3 cup plus 1 tbsp light corn syrup
- 1 cup chocolate chips, either milk or semisweet
- 1/2 tsp coconut oil or butter, this is optional for melting chocolate
Instructions

1.Line a square pan with parchment, wax or foil then mist with cooking spray. Make sure to overlap the paper for easy removal. Set aside until ready.
2.Heat PB with sugar, corn syrup over low to medium heat in a heavy saucepan. Keep stirring until melted. Add in the crunched up cereal. Mix well with a rubber spatula. Dig deep in the pan to incorporate all the cereal into the PB mixture.
3.Pour mixture into the prepared pan. Mist either parchment or wax paper with cooking spray to help spread and pat down evenly.
4.Melt chocolate with the small amount of oil in the microwave at 20 second intervals. Take out, mix and put back until the chocolate is smooth and shiny. Try not to overheat the chocolate. Spread over the top and if you want, take a butter knife and make a design.
5.Cool on the counter until firm. If you can’t wait, place in fridge for 15 minutes and then finish on the counter.
6.Lift up the paper and cut into squares. Easy-Peasy, delicious! Enjoy!!
