No Bake Light as Air Strawberry Pie

I think we all remember a pie from childhood similar to this one.
It’s definitely a retro pie.
My mom Ruthie served this when here bridge friends would come over. She always made two pies and saved me a piece in the fridge.
How special it was the next morning when I found a luscious piece waiting for me.
Years later when I lived in Atlanta, I was a caterer. This was served at most bridal and baby showers.
It was requested very often from word of mouth.
Everyone loves this pie, it’s so light and totally luscious.
Just a recipe note, you can use any flavor Jell-O to change things around. Orange, lemon, peach. They all work.
No Bake Light as Air Strawberry Pie
Yields 8 servings
What you’ll need to make a no bake light as air strawberry pie…
Ingredients:
- 3 ounce box strawberry flavor sugar free Jell-O gelatin or any store brand, You can use with sugar but the nutritional’s will change
- 2/3 cup boiling water
- 1/2 cup ice water or very cold water
- ice cubes to fill cup of ice water to the top
- 3 cups Cool Whip, regular or light
- 1/2 cup diced or chopped fresh strawberries
- 1 ready to use graham cracker pie crust, I used the reduced fat, ( you can’t tell the difference)
- Strawberries for garnish, optional
- shaved white chocolate for garnish, this is optional
- aerosol whipped cream for garnish
Directions:
- In a heat proof bowl or heat proof glass measuring cup, add boiling water to Jell-O mix. Stir well until completely dissolved. This should take between 1 1/2 to 2 minutes.
- Using an 8 ounce measuring cup, add the ice water; fill the rest with ice until it reaches 8 ounce/1 cup.
- Carefully add to the hot Jell-O mixture and stir until slightly thickened.
- Remove any ice that hasn’t melted.
- Fold Cool Whip into mixture.
- Stir until well blended. You may see a few streaks of red, that’s okay.
- Cool in fridge for about 10 minutes. Stir once more.
- Spoon mixture into graham cracker crust and smooth. Make a quick decorative swirl with a spoon if you’d like. Cover with the plastic lid that comes with the crust and put back in fridge for at least 4 to 5 hours.
- Garnish with whipped cream, strawberries, grated white chocolate or leave plain.
