Easy Cucumber Dip

 For a delicious simple way to make a refreshing cucumber dip, you are in the right place. Everyone will love this easy cucumber dip. Always a big hit with family and friends. 

 

Every holiday or gathering this dip is one that I serve or bring along to picnics, barbecues, potluck dinners, and just about any gathering.

It’s always requested and I love making it especially because my family loves it so much.

I always make sure there is just enough extra dip to leave over in the fridge for the next day.

So my kids and hubby can dig in to with their favorite crackers and veggies.

Not only is this a great recipe as a dip, it’s also delicious as a sandwich spread. 

What we do is, make half a recipe and keep in the fridge for a couple of days so everyone can slather some on their favorite sandwiches. 

In stead of mayo or mustard or even ranch dressing, try some of this on both slices of a sandwich or roll. Then pile on your favorite meats and cheeses. Your sandwich will taste so delicious that you’ll want to make it with this cucumber dip from now on.

Easy Cucumber Dip

Yields: about 12 to 18 servings

Here’s The Simple Ingredients:

  • 16 ounces softened cream cheese (2 blocks) you can use reduced fat but, not fat free for this recipe
  • 2 cups mayo, you can use 1 cup low fat and one cup regular but again, not fat free for this recipe
  • 1 large Seedless/English cucumbers (the ones in the plastic wrap) You can use 2 large regular cucumbers also (peeled and chopped into small diced pieces)
  • 1 tbsp fresh dill
  • 2 tbsp fresh lemon juice
  • 1 chopped shallot or 2 tsp dried minced onions
  • 2 to 3 tsp Sriracha, adds such great flavor without a lot of heat or spice
  • 1 tsp sea or kosher salt or to taste
  • 1/2 tsp ground black pepper or leave out

Here’s how to prepare a simple cucumber dip

Easy-Peasy Directions:

  1. In a large mixing bowl, beat cream cheese with a hand or stand mixer using the paddle until smooth and creamy. (These are the two I use all the time and love!)
  2. Add in mayo and beat until combined with the cream cheese. 
  3. Stir in remaining ingredients with a wooden spoon or rubber spatula. Place in serving bowl, cover and place in fridge for about 1 hour or until ready to serve. (Keeps in fridge up to 2 days covered)
