These delicious bars are a tasty mashup of a blondie bar and cheesecake square. They feature a blondie base of spice cake and then, they’re topped with a rich, sweet cheesecake mix. Every bite explodes with fall flavor and classic cheesecake flavor to deliver a dessert that’s fancy enough for even swanky get-togethers but easy enough for everything from weeknight desserts to a bring along potluck treat for any dessert table. It’s the best combination of ease and flavor, and I think you’re going to love it as much as my family and friends do. Me too! I just adore these bars.

For the Crust

  • Spice cake mix
  • Large eggs
  • Unsalted butter, melted and cooled

  • Powdered sugar
  • Cream cheese, softened to room temperature
  • Large eggs

  • Sea or kosher salt

How to Make Copycat Neiman Marcus Cinnamon Bars

Step 1: Prep

Preheat the oven and spray a baking dish win nonstick spray. Set aside. 

Step 2: Make the Crust

Combine the crust ingredients and spread them evenly over the bottom of the baking dish. 

Step 3: Make the Cheesecake Topping

Blend the cheesecake ingredients together using a hand mixer until smooth and spread it evenly over the spice cake base. 

 

 

Step 4: Bake

Bake for 35 to 40 minutes or until the topping is browned. Then, cool for 30 minutes or so on the counter. After, place in fridge and let chill completely. At least 2 hours or until firm and cold. Slice up and enjoy! 

 

Variations and Substitutions

In a pinch, to swap out a spice cake mix for a regular yellow or butter cake mix, just add 2 teaspoons of cinnamon plus 1/2 teaspoon nutmeg to the dry mix. Mix with a whisk to incorporate. Simple as 123!

Only have reduced fat cream cheese in the house? No problem, you can easily use that in place of regular cream cheese. But, fat free will not work in this recipe. 

Storage

You can store these bars for up to 5 days in the refrigerator in an air-tight container. For longer storage, you can freeze them for up to a month in an air-tight, freezer-safe container. You can’t leave these out on the counter to store because of the cheesecake topping. They taste nice and chilly right from the fridge.

  • An electric hand mixer is your best friend for this recipe. It makes it so much easier to get the cheesecake super creamy. You can certainly use a stand mixer as well. 
  • The center of this dish will still be a bit wobbly when it’s all done. Don’t cook it until it’s firm, or you’ll overcook it. When the bars cool down in the fridge they will be just right.
  • Be sure to let the cheesecake cool for a minimum of  1 hour before cutting, otherwise, you’ll have a mess instead of bars.

Ingredients

  • 1 box spice mix
  • 4 large eggs
  • 1 stick or 1/2 cup unsalted butter, melted and cooled

Topping

  • 8 ounces cream cheese, softened to room temperature
  • 4 cups powdered sugar, mixed with a whisk to break up any clumps
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees. Prep a 9 x 13 inch baking pan with nonstick baking spray. Crust: In a medium mixing bowl combine the cake mix, 2 large eggs, and the melted butter. Use a rubber spatula to spread the crust ingredients on the bottom of the prepared baking pan .Topping: Use an electric mixer to blend the powdered sugar, cream cheese, 2 eggs, and cinnamon together in another bowl. Continue beating until it is smooth. Pour on top of the crust. Spread the topping evenly from corner to corner. Bake at 350 degrees for 35-40 minutes or until the topping is browned. The center will still be slightly wobbly. Let cool on counter for about 30 minutes then place in fridge to cool completely. At least 1 hour. Preferably up to 4 hours. Slice up and enjoy! Store covered tightly in fridge up to 5 days or in freezer up to a month.
