Halloween Eyeball Cupcakes

This fun recipe for Halloween Eyeball Cupcakes is sure to become a family favorite around Halloween time. An easy-peasy recipe for the whole family to enjoy making together. Bake a batch soon and enjoy every spooky eyeball bite!

Halloween is a big deal around my house.

My son Josh starts decorating the outside of our house the end of September.

I usually decorate the inside of the house but, I start closer to the end of September. 

Also, for my part, the baking and goodies start just around the second week of October.

Every week we have another yummy Halloween treat to enjoy. This year it was these fun and spooky “Halloween Eyeball Cupcakes”

My daughter came home this past weekend and we all got in on the fun making these fun, yummy cupcakes.

It’s not a lot of ingredients to make these. Be creative and use any color of frosting and there’s so many different kinds of candy eyeballs to choose from. Even with eye lashes! 

I hope you bake a batch of these delicious and fun looking cupcakes so you can have enjoy them like we do around here. They come out really delicious too. 

Halloween Eyeball Cupcakes

Yields: about 18 cupcakes

 

What you’ll need to make a batch of these fun Halloween Eyeball Cupcakes…

Ingredients:

  • 1 box any flavor cake mix, plus ingredients on box
  • 1 -2 tubs vanilla frosting
  • purple food coloring, either drops or gel, both work for this recipe
  • 18 Oreo cookies
  • 18 Life Saver Gummies
  • 18 eyeball candies, found at most crafts or hobby stores, or online here
  • red food coloring gel

Supplies:

  • tooth pick for dipping into red food coloring gel to make squiggles around eyeballs

 

How to make a batch of these fun and yummy cupcakes…

Directions:

  1. Bake cupcakes according to package directions, and set them aside to cool completely.
  2. Add purple food coloring to tub of frosting, Mix until desired color of purple.
  3. Frost with thin layer and smooth out with a butter knife or an offset spatula (A great utensil to have around)
  4. Carefully pull Oreo cookies apart, keeping the side that has the cream. ( Use the other half for another recipe)
  5. Use a bit of your leftover frosting to secure a Life Saver to the edge of the cream.
  6. Use a little frosting to place an eyeball in the center of the Life Saver.
  7. Using a toothpick, carefully draw squiggly lines with the red food coloring around the Oreo cream.
  8. Place on top of the cupcakes. That’s it! Enjoy and Happy Halloween!!

Have fun with the whole family making these yummy and spooky eyeball cupcakes for Halloween. Give them out as gifts for everyone to enjoy!

Ingredients
