Copycat Neiman Marcus Cinnamon Bars

These delicious Copycat Neiman Marcus Cinnamon Bars are decadent, sweet, and overflowing with all the rich, cinnamon and spice flavors we love in the originals. A spice cake mix crust is topped with a sweet cream cheese cheesecake mixture that always brings everyone back for more.

Ingredients

  • 1 box spice mix
  • 4 large eggs
  • 1 stick or 1/2 cup unsalted butter, melted and cooled

Topping

  • 8 ounces cream cheese, softened to room temperature
  • 4 cups powdered sugar, mixed with a whisk to break up any clumps
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees. Prep a 9 x 13 inch baking pan with nonstick baking spray. Crust: In a medium mixing bowl combine the cake mix, 2 large eggs, and the melted butter. Use a rubber spatula to spread the crust ingredients on the bottom of the prepared baking pan .Topping: Use an electric mixer to blend the powdered sugar, cream cheese, 2 eggs, and cinnamon together in another bowl. Continue beating until it is smooth. Pour on top of the crust. Spread the topping evenly from corner to corner. Bake at 350 degrees for 35-40 minutes or until the topping is browned. The center will still be slightly wobbly. Let cool on counter for about 30 minutes then place in fridge to cool completely. At least 1 hour. Preferably up to 4 hours. Slice up and enjoy! Store covered tightly in fridge up to 5 days or in freezer up to a month.
