3 Ingredient Creamy Meatball Bake

 

This 3 Ingredient Creamy Meatball Bake is my go to weeknight casserole when I’m really short on time. Grab these three ingredients and a box of instant rice and you have dinner in no time at all. For the quickest appetizer, grab some toothpicks and dig in.  Enjoy the deliciousness!

It’s another busy weeknight and I need to throw something together for the family dinner.  Sound familiar? Too familiar I’m sure.

If you are like me, between work and running the kids here and there on top of keeping a household, sometimes dinner takes a back seat so to speak. 

It really doesn’t have to. Sometimes we just need to get a little creative with the small amount of time we have to prepare dinner. 

I always have frozen meatballs in the freezer, turkey, chicken, and beef, vegan, and vegetarian. Also, the meatballs come in sizes. For this time around, I used smaller meatballs. 

It’s easy to find packages that are made with real, whole ingredients and not fillers. They are also pretty much cost efficient. Especially when they go on sale, I stock up. Check for sales in your local grocery stores. Target and Walmart too. 

Another two more items that’s always in my pantry and freezer are rice, white, brown, mixed. Again when they go on sale, I buy a lot. Just a suggestion. Check the dates, make sure you have at least a year or more on each package. The other items that are always in my freezer are frozen vegetables. Mixed, peas, and corn are my family’s favorite. Broccoli is my son Josh’s favorite so I make that pretty much twice a week for him. 

When you put these few things together you have a balance meal that’s quick and easy to make like the 3 Ingredients Creamy Meatball Bake. For other recipes, just change around the sauce for another delicious and healthy weeknight meal. 

 I am always looking to make a healthy meal yet, it has to taste delicious too. If it is not tasty, the family will not eat the dinner and what’s the sense? 

This 3 ingredient recipe was just the thing to satisfy a hungry family.

Can You Change Around The Kind Of Meat For These Meatball Recipes?

You sure can. Any kind of meatball you like can be switched for any of the meatball recipes featured. Some days you may want a leaner meat such as turkey breast meatballs. Other days you may want a really hearty tasting meatball. Go for the veal and beef meatballs. I found so many frozen and fresh varieties in the my local grocery store. Sometimes, I go to the local butcher and buy a few of their freshly made meatballs.  

Simplicity is the name of the game when it comes to shortcut and quick meals for busy weeknights and all around just being busy but still wanting to feed your family a good, wholesome meal. 

3 Ingredient Creamy Meatball Bake

Yields: about 4 to 6 servings

Ingredients:

  • a can cream of chicken soup
  • a package frozen meatballs, your choice
  • ketchup, sound crazy? This is what makes the sauce taste so good when mixed with the soup
  • additional spices optional – onion powder, garlic powder, ground pepper

Directions:

  1. Preheat oven to 375 degrees.
  2. Pour soup and 1 can water into baking dish. Use a whisk or fork to mix completely. Add in ketchup and any spices if using. Whisk again until combined.
  3. Gently toss any amount of meatballs into gravy. Spoon gravy over meatballs a few times.
  4. Bake for about 30 to 40 minutes or until you see gravy bubbling. Spoon gravy over meatballs a few times while baking.
  5. That’s it! Enjoy with rice or noodles. Add a vegetable as a side dish.

  • 1 package frozen meatballs, I used Trader Joe’s turkey meatballs
  • 1 can cream of chicken soup
  • 2 tbsp ketchup
  • •additional spices optional – onion powder, garlic powder, ground pepper

Instructions

  1. 1.Preheat oven to 375 degrees.
