Spinach Tortellini Soup For One

When short on time but still wanting a warm and nourishing light meal idea, try my easy-peasy spinach tortellini soup for one recipe. This has become one of my favorite soup recipes that I make very often. 

If you are looking for a quick and easy recipe when either in a hurry or just something filling yet simple when you don’t have much time, this is a great recipe to have on hand.

You can use cheese tortellini like I did in this recipe or meat tortellini works great too. The meat is a bit more hearty so, on those days you want to fill up a little more, that may be the way to go. You can also find tri-color, both come in cheese and meat and basically tastes similar to the regular one you see all over but has a nice colorful appearance. 

This recipe takes only a few minutes to prepare using my shortcut way.

I buy a bag of fresh spinach either baby or regular spinach that has already been washed. That saves a lot of time for sure. I also buy grated or shredded carrots in a bag that also has been washed.

So, it’s a win win especially when it’s a rush to get something to eat in a jiffy.

I do make this soup for lunch a lot. Since I work from the house, why not make myself a healthy and delicious lunch?

S0metimes when I’m really hungry, I’ll make myself a grilled cheese or half of turn sandwich to go along with the soup.

The recipe does heat up nicely. I send this to school for my son since there is a microwave in his cafeteria and also to my husband to take to the office. He also has a microwave to heat up food I send him with.

Spinach Tortellini Soup For One

One bowl nutritional’s: calories, 218, fat 4.1 g. protein 12.8 g

 

What you’ll need to make a bowl of spinach tortellini soup for one…

 

Ingredients:

  • 2 cups low sodium chicken or vegetable broth
  • sea salt and ground white or black pepper to taste
  • 1 clove garlic chopped
  • 1/2 cup frozen or fresh cheese tortellini
  • 1/2 cup grated carrots, or chopped
  • 1 cup fresh regular or baby spinach
  • sprinkling of parmesan on top, this is optional

 

 

 

 

 

How is spinach tortellini soup for one made…

 

Directions:

  1. In a small saucepan, heat broth until boiling. Add garlic and salt and pepper to taste.
  2. Gently toss in tortellini. Cook as per package directions. Toss in carrots and spinach. When tortellini is cooked, carefully pour into bowl.
