Simple Strawberry Sorbet Recipe

Why spend four dollars or more for a cup of sorbet or frozen yogurt when you can make this much healthier strawberry sorbet at home, without all the added sugar and carbs.

What is Sorbet?

Sorbet is a frozen dessert traditionally made from a base of flavored water, sugar and fruit.

The flavor is what fruit you decide to use.

Sherbet vs Sorbet

People often interchange sorbet with sherbet and while they are similar, they’re not the same.

Here’s the main difference between sherbet and sorbet: sherbet contains dairy ingredients and sorbets do not contain dairy ingredients.

Sherbet and Sorbet Pronunciation

These desserts are said to originate from ancient Persia. Some believe Asian cultures discovered sorbet by crushing blocks of ice with different flavorings.

The pronunciation for sherbet is “SHER-but.” Some people do pronounce it, “SHER-bert,” but that is less common.

And for the sorbet pronunciation, go with “SOR-bey.”

Homemade Sorbet

In this homemade sorbet recipe I’m recommending working with strawberries and blueberries but really, you can use any fruit you have on hand or in the freezer.

Think of this sorbet recipe as your basic template and add a little creativity every time you try it!

Seriously, let your inspiration guide you. Sorbet ice cream, possible. Strawberry sorbet? Definitely. How about acai sorbet? Absolutely. Oh, and don’t forget about watermelon sorbet. Now THAT is a treat!

Homemade sorbets exactly like store bought sorbets, its base has a combination of fruit or fruit juice, water and sweetener. Most of the time store bought is made with sugar. You’ll see I add just one more ingredient for the perfect balance of sweetness and tartness.

Now, this recipe for strawberry sorbet recipe is even healthier than your basic berry sorbet.

I like to use honey or agave nectar as a sweetener and sometimes  allulose, a natural sweetener. You can always use stevia or monk fruit too. I wouldn’t use maple syrup because it will give the strawberry sorbet a strong maple flavor and hide the freshness of the strawberries.

Of course this is a basic template for homemade sorbet, not an exact science. Try it my way, and see what you think. And then add your own sorbet ingredients to make your unique homemade sorbet.

Sometimes I add mini chocolate chips or some orange zest to the sorbet. The skies the limit. But, the main ingredient in any sorbet recipe is the frozen fruit. You can freeze your fresh berries but, I buy the bags of frozen fruit in my market and Target.

The one important thing to look for when buying frozen fruit is the ingredients should only have the kind of fruit you are buying. “Strawberries” That’s it. No added sugars or stabilizers.

Simple Strawberry Sorbet Recipe

Yields: 1 to 2 servings

What you need to make simple strawberry sorbet…

Ingredients:

  • 1 1/2 cups Frozen Strawberries
  • 1 to 2 tablespoons sweetener of choice such as honey, agave, or a sugar free alternative, or leave out
  • 1 teaspoon fresh lemon or lime juice
  • 2 tablespoons warm water, more if needed. (I warmed a 1/4 cup cold water in the microwave for just about 20 seconds)
  • smallest pinch salt, this is optional

How to Make Strawberry Sorbet…

Directions:

  1. In a heavy duty blender like a Vitamix or Ninja, or food processor, add the frozen strawberries with the lemon or lime juice. Start to whirl up. Add in a tablespoon at a time of the warm water.
  2. Stop and scrape down the sides if needed with a tamper or rubber spatula. Whirl until smooth with some texture.
  3. Taste and see if you want to add a sweetener. Start with the smallest amount. Whirl to incorporate. Stop and taste again.
  4. To serve right away, scoop out with a large spoon into dessert dishes. For a firmer texture. Spoon out into a freezer safe container or a loaf pan. Cover the top with plastic wrap, wax paper, or parchment paper. Freeze up to 2 hours. Check after an hour. Then, scoop out into dessert dishes. Garnish with fresh mint or more fruit if desired. Enjoy the freshness!

   Recipe note: If you freeze the sorbet for more than a couple of hours, you may need to let sit out for a few minutes to soften up so you can scoop out.
