Ingredients

  • 1 1/2 cups frozen strawberries
  • 1 to 2 tbsp sweetener of choice such as honey, agave, or a sugar free alternative, or leave out
  • 1 tsp fresh lemon or lime juice
  • 2 tbsp warm water, more if needed. (I warmed a 1/4 cup cold water in the microwave for just about 20 seconds)
  • smallest pinch salt, this is optional

Instructions

  1. 1. In a heavy duty blender like a Vitamix or Ninja, or food processor, add the frozen strawberries with the lemon or lime juice. Start to whirl up. Add in a tablespoon at a time of the warm water.

    2. Stop and scrape down the sides if needed with a tamper or rubber spatula. Whirl until smooth with some texture.

    3. Taste and see if you want to add a sweetener. Start with the smallest amount. Whirl to incorporate. Stop and taste again.

    4. To serve right away, scoop out with a large spoon into dessert dishes. For a firmer texture. Spoon out into a freezer safe container or a loaf pan. Cover the top with plastic wrap, wax paper, or parchment paper. Freeze up to 2 hours. Check after an hour. Then, scoop out into dessert dishes. Garnish with fresh mint or more fruit if desired. Enjoy the freshness!

Recipe note: If you freeze the sorbet for more than a couple of hours, you may need to let the pan sit out for a bit to soften up so you can scoop out.
