I do, and this is one that my family adores just as much as I love making and eating this cobbler.

It’s a really easy and simple recipe with basic ingredients that you may already have on hand.

Check your pantry and fridge. If you’re like me, you’ll have the few ingredients to make one of these delicious lemon cobblers.

There’s one ingredient from the fridge that maybe you wouldn’t think goes into a cobbler but, this one ingredient makes this cobbler and other baked desserts have a wonderful texture. Like,

melt in your mouth wonderful.

I recently made this for a friend of mine. She was having a very small graduation party for her daughter.

She had told me that they all loved lemon desserts especially her daughter. I was going to give her the recipe for this simple lemon cobbler but instead I made one for her on the day of the party.

The funny thing is, afterwards she asked me for the recipe. I gave it to her and she made it the next weekend since her whole family loved it so much.

Simple Lemon Cobbler

Yields: about 9 servings

What you need to make a simple lemon cobbler

You’ll need just a handful of basic ingredients

Here are the ingredients:

  •  unsalted butter

  •  self rising flour

  •  granulated sugar

  •  buttermilk

  •  vanilla extract

  •  lemon zest

  • 1 ( 22 ounce ) can of lemon pie filling

  • dusting powdered sugar

How to make a simple lemon cobbler

Just a few simple steps is all that’s needed

Here’s the easy-peasy directions:

  1. Preheat the oven to 350 degrees

  2. In a small mixing bowl, melt the butter in the microwave.

  3. Pour the butter into a 9 x 9 baking dish. (I like to use a glass dish so everyone can see how beautiful this dessert is) Make sure to spread the butter evenly using a pastry brush or a rubber spatula. Go up the sides of the baking dish too. Set aside for just a few minutes.

  4. In a large mixing bowl add the self rising flour and granulated sugar. Use a whisk to break up any clumps. Add the buttermilk, vanilla, and lemon zest. Whisk or mix with a spatula until combined.

  5. Pour the buttermilk batter evenly into the buttered baking dish. Lightly spread the batter over the whole baking dish.

  6. Spoon the lemon pie filling  over the buttermilk batter. Do not stir. This is important for the right texture

  7.  Once you pour the lemon pie filling over the batter, just leave as is.

  8. Bake for about 50 to 60 minutes. The top should be lightly browned and the middle may still have a bit of a wobble to it.  Let cool down just a bit.  Sprinkle with powdered sugar. Delicious slightly warm with whipped cream or vanilla ice cream. Also just as delicious served cold topped with a dusting of powdered sugar. Store in fridge up to 3 days.
