I love all things cheesecake, and a cheesecake parfait is just about my favorite version of this classic dessert flavor. Cheesecake parfaits are a great way to enjoy this sweet, tangy dessert because they have all the great flavor of the classic in a fun, layered look.

This version is one of my favorite ways to make cheesecake parfaits because it’s no-bake and so incredibly easy. It’s perfect for dessert or to serve at parties.

Ingredients

  • 1 1/2 cups graham cracker crumbs, crushed
  • 2 8 ounce packages cream cheese, softened
  • 3 tbsp  heavy cream
  • 1/3 - 1/2 cup granulated sugar, taste test starting with 1/3 cup
  • 1 tbsp  lemon juice
  • 1 tbsp  lemon zest
  • 2 tsp vanilla extract
  • 1 1/2-2 cups fresh fruit (strawberries, blueberries, raspberries, blackberries or a mix

Instructions

  1. Have the jars ready to go.  Fill each one with about 2 heaping tablespoons crushed graham crackers. 

    In the bowl of a stand mixer, or a large bowl using a hand mixer, combine the softened cream cheese and sugar.  Mix to combine well. 

    Add in the heavy cream and whip until thoroughly combined, about 3 minutes on medium speed. Mixture should be fluffy. Scrape the sides often.  

    Add in vanilla, lemon juice and lemon zest.  Mix gently to combine.  

    Spoon the filling mixture into each jar.

    Top with the fresh fruit of your choice.  

      Cheesecakes should be stored in an airtight container in the fridge for up to 1 day.  Add the fresh fruit just prior to serving for the best results.
