
These mini no bake cheesecake parfaits are delicious and so simple to make. Six delicious, individual cheesecake parfaits loaded with rich cheesecake, graham crackers, and berry layers.
Have the jars ready to go. Fill each one with about 2 heaping tablespoons crushed graham crackers.
In the bowl of a stand mixer, or a large bowl using a hand mixer, combine the softened cream cheese and sugar. Mix to combine well.
Add in the heavy cream and whip until thoroughly combined, about 3 minutes on medium speed. Mixture should be fluffy. Scrape the sides often.
Add in vanilla, lemon juice and lemon zest. Mix gently to combine.
Spoon the filling mixture into each jar.
Top with the fresh fruit of your choice.
Cheesecakes should be stored in an airtight container in the fridge for up to 1 day. Add the fresh fruit just prior to serving for the best results.
