Knock Your Socks Off Brownies

Love this simple recipe for knock your socks off brownies. Everyone you serve them to will love them and so will you. Enjoy every gooey, chocolate bite!

You just can’t go wrong with the combo of caramel and chocolate. Especially in a brownie.

When I serve these, they’re eaten up in no time at all. Seriously, the caramel gooeyness just seems to be a favorite with family and friends.

I bring these to many picnics, barbeques, and pot luck dinners.

One year, my son Josh asked me to make this for his birthday cake.

So, I did just that. Instead of cutting into brownies ahead of time, I decorated with a birthday message, added the candles and after Josh blew out the candles, I cut the brownie up.

To say the least, it was a huge hit with all friends. In fact, a few days later one of the moms’ called and asked for the recipe. She said her daughter would love this for her birthday too.

It’s not a recipe to forget. That’s how delicious these brownies are.

Now, about the recipe. First of all, it’s the most simple recipe with very few ingredients and it starts with a cake mix. Really any cake mix of choice will work. I used a chocolate fudge mix this time. But, a few times I used a German chocolate cake mix, milk chocolate cake mix and even red velvet cake mix.

That brings me to where I originally saw a similar recipe and what gave me the inspiration to make a batch.

While watching the cooking show that’s on the Food Network,  The Pioneer Women. You probably all know Ree Drummond the host and creator of the show.

She made a batch of a very similar brownie recipe. It looked like an amazing brownie recipe and knew I had to make a batch too. 

I changed the recipe just a bit and it’s now a staple around my house. Also, I changed the name she gave these brownies. She called them knock you naked brownies. 

My son Josh makes these for his now “older” friends himself. Going on 17 years young, he’s a great cook and baker and loves to get in the kitchen and do his thing. Making it messy is first on his list. LOL!

Knock Your Socks Off Brownies

Yields: 9 to 12 brownies

 

What you’ll need to make a batch of knock your socks off brownies…

Ingredients:

  • 1 stick unsalted butter, (half a cup) melted
  • 1/3 plus 1/2 cup evaporated milk, not sweetened condensed milk
  • 1 box chocolate cake mix
  • 3/4 cup finely chopped pecans or you can leave out
  • 50 caramels, unwrapped
  • 3/4 to 1 cup semisweet or bittersweet chocolate chips, I used mini chocolate chips this time

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Here’s how to make these amazing gooey brownies…

Directions:

  1. Preheat the oven to 350 degrees, spray a 9 X 9 inch square baking pan with cooking spray and line with parchment paper. Set aside.
    Pour 1/3 cup evaporated milk into a mixing bowl with the cake mix. Add the melted butter and the chopped pecans. Mix the ingredients together; it will be very thick.
  2. Divide the dough in half down the middle. Press half of it into the bottom of the prepared pan to make the first brownie layer. Bake until slightly set, 8 to 10 minutes. Then remove from the oven and set aside.
    While the brownie layer is baking, in a double boiler, combine the caramels and the remaining 1/2 cup evaporated milk. Stir until the caramels are melted and the mixture is smooth. Pour the caramel mixture over the first baked layer. Sprinkle the chocolate chips.
  3. Now, on a sheet of waxed paper, press the remaining dough into a square shape slightly smaller than the baking pan. Place on top of the chocolate chip layer and sprinkle with more chocolate chips. Bake for 20 to 25 minutes. Remove the pan from the oven and let the brownies cool to room temperature. Cover the pan and refrigerate the brownies for at least 2 hours to allow them to set.
  4. Remove from fridge, cut into 9 or 12 squares. That’s it! So easy, right?!
