Recipe Yields: 2 wraps
What goes in this delicious Greek chicken wrap…
Ingredients:
- 2 large spinach tortilla wraps
- 2 to 3 chicken tenders
- 1/2 to 3/4 cup hummus, I used store bought
- 1/2 cup chopped red or white onion
- 1 cup English or hot house cucumber, sliced
- 2/3 cup cut up cherry or grape tomatoes
- 1 cup chopped romaine, iceberg, or any lettuce of choice
- 1/2 to 3/4 cup feta, swiss or goat cheese cut into small pieces
- 1 tbsp Greek seasoning, found at most markets and Walmart
- 2 to 3 tbsp favorite Italian or Greek dressing, optional
How to make this Greek chicken wrap…
Directions:
- Preheat oven to 350 degrees, line a baking sheet with parchment paper.
- Season chicken tenders with Greek seasoning, place on baking sheet and cook tenders until done, internal temperature should be 165 degrees, juices should run clear and there should be no pink in the center. Let cool slightly and cut into bite size chunks. Set aside.
- Cut up lettuce, tomatoes, cucumbers and onions. Set those aside.
- Lay out each tortilla, spread with hummus right down the middle. Layer your veggies then place chicken on top of the veggies then feta cheese, as seen in photo above. (Add dressing if using)
- Roll over one flap of tortilla and tuck under the filling. Then, roll up. Cut in half or keep whole with a tooth pick if needed. Grab those chips, plate up and take a big bite!
Enjoy the freshness!
