Greek Style Chicken over Lemon Rice
A simple and delicious recipe that my daughter Tori came up with. She made this for her roommates in college and they all loved it. So glad she shared with me so I can share with you. You should check out this Greek Style Chicken over Lemon Rice dish, it’s totally delicious.
Here’s a delicious and easy recipe that my daughter made for her roommates and herself while she was in undergrad.
She was in her third year at college when she came up with this recipe.
They then moved to a new house with a big kitchen. Actually the house was over 100 years old.
The kitchen was remodeled a few years back.
Lots of cooking and baking went on in between studying.
Not just Ramen noodles for those girls.
Now, she’s since graduated from college and in her second year of law school.
In another house with 5 other roommates. all law and medical students.
When we recently spoke she told me she’s still cooking up a storm along with all the other roommates.
My daughter is a great creator of recipes and her peanut butter chocolate chip cookies are fabulous.
I’ll have to share those on here very soon. She made them in a snow storm while stuck in and in-between studying.
And, as soon at they are out of the oven, hungry students can’t wait and in about five minutes all the cookies are practically gone.
There’s a few male roommates in this house with big appetites.
When she originally gave me the recipe, I made her recipe and my son and husband loved the cookies.

Greek Style Chicken over Lemon Rice
Yields: 4
What ingredients are in this delicious Greek style chicken over lemon rice…
Here Are The Simple Ingredients:
- 4 boneless and skinless chicken breasts, rinsed with cold water and patted dry with paper towels
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 – 2 garlic cloves, or 1 1/2 tsp garlic powder
- 2-3 tbsp fresh chopped parsley, you can use dried but for this recipe fresh is best
- 1/2 tsp dried oregano
- 1/2 tsp Kosher or sea salt
- 1/2 tsp ground pepper
For the lemon rice:
- 2 bags instant white, brown rice or any flavor – like Uncle Bens or minute rice
- 1 tbsp lemon zest
- 1 tsp lemon juice
- 1/4 tsp Kosher or sea salt
- 1/4 tsp ground pepper
How is this recipe prepared…
Here’s The Easy Directions:
- In a large Ziploc bag, add olive oil, lemon juice, garlic, parsley, oregano, salt and pepper. Swoosh around to combine all ingredients.
- Add chicken breasts. Place bag on a plate in fridge for 15 to 30 minutes.
- Using a large non stick pan or grill pan, place the 4 chicken breast in pan and grill or Saute on each side until juices run clear. Make sure there is no pink inside. If needed, you can pop them in the oven until juices run clear.
- While the chicken is cooking, make rice and pour into medium serving bowl, drizzle lemon juice over and toss gently. Add zest, salt and pepper and toss gently again.
- Serve chicken over rice.

Ingredients
