Easy Homemade Rice Pudding

If you are a fan of rice pudding, you will love this easy recipe that is so delectable. Great hot or cold from the fridge. Everyone is going to adore this easy homemade rice pudding. Take a big spoonful and enjoy!

 

My family and I are huge rice pudding fans. 

Loved rice pudding since I was a child and so did my hubby. My mom would buy it in the deli department in the grocery store or at one of the local diners in town. They both made it really creamy and my sister and I loved it that way. 

Sometimes I would buy it at the deli department in my grocery store and diner on occasion too.

Years later we just bought the little rice pudding cups at the grocery store, my kids love those a lot. Occasionally I would still get some at the diners and the deli.  

I never even thought about making rice pudding since we all liked the little cups and when we went out to the diner we would pack up a container and take it home. 

One day I realized this was crazy, I’m a food blogger without a rice pudding recipe. That’s when I tried out a few different recipes.

After a few tries I  came up with this easy recipe.

Made so simply with my secret ingredient, sweetened condensed milk. It makes the creamiest and most luscious pudding.

 It takes no time at all.  Great hot or cold right from the fridge.

We love it so much that sometimes we have it for breakfast with fresh fruit mixed in and on top. 

Another way, sprinkle cinnamon or cinnamon sugar over top. That gives a nice little crunch.

Of course a dollop of whipped topping or whipped cream makes this a decadent dessert. 

 Adding some sliced apples, berries or just about any fruit makes a wonderful snack or breakfast like I mentioned before. You can also add some crunchy granola on top too. 

Another way to enjoy, top with some dried fruits and chopped nuts for a great texture.

Anyway is the right way.  To be honest, my favorite way to eat this rice pudding  is warm right after it’s made. Plain with nothing in it or a sprinkling of cinnamon. 

This pudding is a staple in my house.

Easy Homemade Rice Pudding

Yields: about 4 servings

What you’ll need to make this delicious recipe pudding…

Ingredients:

  • 2 cups cooked white rice, I used long grain
  • 1 can low fat or regular sweetened condensed milk, 14 oz can
  • 2 tbsp brown sugar
  • 1 large egg lightly beaten
  • 1 tsp vanilla extract
  • 1/4 tsp sea or kosher salt
  • 1/2 tsp cinnamon, this is optional

Here’s how to make some…

Directions:

  1. Cook rice as directed. See my “How To Make Perfect White Rice” Save a little bit of the cooking water if possible or warm water, about 2-3 tablespoons. Put aside for a minute or so.
  2. In a medium to large pot pour the condensed milk and beaten egg in along with the sugar, cinnamon and salt. Stir to warm up. Keep mixing. Now add the cooked rice and saved water. Keep mixing until the mixture comes to a slight boil. Let boil for just a couple of seconds and then take off heat. Stir in the vanilla extract.
  3. You can place in 6 small dishes or place in a large serving dish and spoon out when ready to eat. Sprinkle with a little extra cinnamon if you want. Try the first time when this is warm. It is so yummy!
