After I’ve made my chicken salad, I serve it over lettuce or as a sandwich on croissants or soft bread with a garnish of fresh chives for more bright flavor and a pop of color. This incredibly basic recipe only uses a few ingredients to make the best chicken salad sandwich. After that, just pair it with lettuce or your favorite rolls. That’s it! 

  • 2 cups precooked chicken, shredded, I used two boneless, skinless chicken breasts, boil in chicken stock or water. Or, sauté  in chicken stock or in oil or butter until no pink is inside and temperatures is at least 165 degrees.   
  • 1/2 cup mayonnaise, you could use a light mayo but not fat-free
  • 1 stalk celery, diced
  • 1/2 to 1 teaspoon Dijon mustard
  • 1/4 to 1/2 teaspoon salt, I used sea salt, kosher salt is good too
  • 1/4 teaspoon black or white pepper
  • 1 teaspoon dried dill (This is optional but adds a great flavor) Fresh dill is great too. Use 1 to 2 teaspoons or however you want
