These little apple pie fillo cups are so simple to make yet come out looking like an elegant dessert. Easy enough for any weeknight dessert or when you are in the mood for apple pie but don’t want the hassle of baking a whole pie. We all love these little gems and bet you will too.
Have you see these mini fillo cups in your local market or grocery store? If not, look for them in the frozen section of just about any market or grocery store including Target and Walmart and I was told Costco may even carry them too.
These little ready made fillo cups come already baked and ready to be for any filling savory or sweet like these little apple pie cups. They’re light, crunchy, and just right size when you want a mini size dessert or bite size food such as an appetizer.
This time around it was apple pie time. Well, kind of….
A while back my hubby had been craving an apple pie and I would have made him one but it was too late in the day to start a whole pie and I didn’t think there were enough apples in the house anyway.
I told him I would think of something, at that time he had me craving apple pie too.
Then I remembered what was in the freezer and fridge. My go-to fillo cups along with some Dole diced apple cups.
Voila! A mini apple pie coming up.
When I tell you this whole dessert took about 10 minutes that is the truth.
I happened to have the little Dole apple cups but the pear or peach cups would work just as well.
On top of all this deliciousness, they are a low fat and calorie dessert. You’ll see the nutritional content below.
Just a note… this recipe is for 2 servings. It’s easily doubled, tripled or made for any size gathering. Remember, I made this for just my hubby and myself. No kids were home at the time. That’s what’s so great about the little fillo cups, take out what you need and put the rest back in the freezer.
They are really delicious. Give this simple recipe a try sometime.

What do you need to make these cute mini apple pie fillo cups…
Ingredients:
- 4 Mini Fillo Shells, found in the freezer section of your market
- 1 Dole apple cup, in its own juices, or any brand (comes in a package of 4)
- 1/4 tsp apple pie spice
- 1/8 tsp cinnamon
- 1/2 tsp granulated sugar
- 1/2 tsp corn starch

How to make apple pie fillo cups…
Directions:
- Preheat oven to 350 degrees. Have a cookie sheet ready to go.
- Drain the juice from the apple cup and place in a small bowl.
- Place the apples in a saucepan and sprinkle with the apple pie spice and the sugar. Toss in saucepan on a low heat.
- Sprinkle the corn starch in the reserved apple liquid and mix until the cornstarch is mixed well. Pour over the apples and stir until the mixture starts to thicken. Turn the heat up to medium. When thickened take off heat.
- Let the mixture cool down for a few minutes. Fill each of the fillo cups and bake for about 5 minutes. Try not to let the shells get too dark. Take them out and that’s it!
