Well, what’s really the rage about these cookies are they’re  made without any flour. I couldn’t believe it the first time I started experimenting with the recipe. They just come out so delicious, perfect.

My family loves when I make a batch of these peanut butter chocolate chip cookies and that makes me so happy that they enjoy them so much, especially since these are so simple to make and happen to come out just right each time.

Crispy on the outside and just the right amount of a soft, chewy inside.

I added dark chocolate chips for this recipe.

Also, they are a smaller batch. Since they are so easy to prepare, you can whip them up anytime.

 Peanut butter and chocolate go so well together.

Just a note about this recipe, being a low carb cookie, this does not mean that these cookies are low in calories or in fat. It’s just the opposite. Usually when a dessert is low in carbs that means there is low or no sugar content so that means the fat content is usually higher.

In the case of these cookies, there is no added oil or butter in the recipe. The peanut butter acts as both the flavor and fat. So you eliminate any added fat. However the cookies do have a considerable amonut of fat and calories but, if you are following a low sugar, low carb eating plan, these cookies will fit right in.

As an added bonus, each cookie is loaded with protein, 7 grams per cookie with 4 grams of fiber. I eat these as a mid morning or afternoon snack. Sometimes, I even have one as a mini breakfast on the go.

On top of all that, they are beyond delectable.

These cookies are also great for an on the go breakfast.

Low Carb Peanut Butter Chocolate Chip Cookies

Yields: about 10 cookies

Ingredients:

  • 1 cup unsweetened salted peanut butter, I used chunky, creamy works great too
  • 1/2 cup sweetener of choice, I used Splenda, you can use any no calorie sweetener of choice, for a slightly higher carb sugar, try coconut sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1 small to medium  egg
  • 1/8 tsp (tiny pinch) fine sea or kosher salt
  • 1/4 cup dark chocolate chips, I used Lily’s

Directions:

  1. Preheat oven to 350 degrees, line a cookie sheet with parchment paper and set aside.
  2. In a medium mixing bowl, combine all ingredients and stir with a wooden spoon or rubber spatula.
  3. Roll dough into balls.
  4. With the tines of a fork, gently press down on each cookie.
  5. Bake for about 11 to 15 minutes or until tops are golden brown and bottoms are lightly brown.
  6. Take out and let pan cool on wire rack for about 15 minutes. Then transfer cookies to wire rack to cool completely.
  7. Store in covered container up to 4 days on counter or in fridge up to a week.
