Simple Double Corn Cornbread

This easy and simple double corn cornbread recipe is slightly sweet with a double dose of corn. Has a great texture. Perfect to serve in your breadbasket for holidays and a delicious breakfast or dessert too. Enjoy!

The first time I made this cornbread was when I first got married over 25 years ago. My hubby Alan had told me he loved corn bread and corn muffins. So, I wanted to try something a little different and added a small amount of frozen corn. We both loved the texture of the cornbread and now, have been making it this way ever since.

My kids also love this cornbread and my daughter Tori who is newly married, make this for her hubby and he loves it too.

Simple Double Corn Cornbread

 (Pictured below is some of the ingredients in this recipe, the bread happened to be made in a large loaf pan that day, this recipe calls for an 8 x 8 inch square pan.)

Recipe can easily doubled and baked in a 9 x 13 inch rectangle pan

This recipe is made in an 8 x 8 inch square pan

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup dairy or dairy free milk
  • 1/3 cup mild vegetable oil such as avocado oil, canola oil will work too
  • 1/4 cup frozen corn, thawed and drained, this can be optional

Directions:

  1. Preheat oven to 400 degrees
  2. Spray an 8 inch square baking pan and set aside
  3. In a large mixing bowl, whisk all ingredients up until the salt. 
  4. With a rubber spatula, add in the egg, milk, oil, and corn. Dig down to the bottom of the bowl to make sure the wet is incorporated into the dry. 
  5. Pour batter into prepared pan and bake for about 21 to 26 minutes. Or, until the top is lightly browned and a toothpick comes out clean or with dry crumbs. Let cool on a wire rack for only 10 minutes. Slice up and enjoy warm. Can be stored on the counter in a sealed container up to 2 days or in the fridge up to 3 days.
