Shortcut Sweet Chili Shrimp

 This recipe for shortcut sweet chili shrimp has become a family favorite these days. It’s so easy to prepare and using a shortcut method it’s a great meal idea for weeknight.

It’s always nice when you come up with a recipe that not only tastes great and your family loves the dish but, also is so easy to prepare that it works as a perfect busy weeknight meal idea.

The first time I made this it was served over white rice, the second, over brown rice. This time it’s been put over cauliflower rice.

We all loved it. What a nice change and for someone who has never tried cauliflower rice, it’s something you really should try out.

My husband and son didn’t even know they were not eating regular white rice. They just thought I seasoned the rice differently.

Have you seen frozen cauliflower rice? Check your markets and grocery stores. Lots of stores sell a variety of cauliflower rice nowadays.

It’s becomes so popular over the last couple of years.

Of course you can buy a whole head of cauliflower and rice one yourself. But, with my busy and hectic schedule, I would prefer a convenient way of using this wonderful veggie.

They go on sale all the time so check your local markets and grocery stores.

Now, getting to the sweet chili sauce, all I have to say is, this is the best shortcut way to make a saucy glaze for your shrimp or chicken recipe.

Just use a mason jar or any clean jar with a lid and it’s made. Seriously, that’s it.

Also, buying  peeled and clean frozen shrimp makes for a fast and simple recipe too.

I’m sure you’ll love making this recipe for the convenience and you are sure to love it as well.

Shortcut Sweet Chili Shrimp

Yields: 4 to 5 servings

How To Make This Simple Shortcut Shrimp Meal…

Here are the ingredients:

  •  precooked shrimp, thawed and tails removed, small or medium both work well (follow directions for rinsing in cold water to thaw)
  •  olive oil for sautéing shrimp 
  •  1 or 2 bags frozen plain cauliflower rice
  •  frozen corn and peas 
  •  grated carrots
  •  butter or more olive oil for sauteing cauliflower mixture

For the sweet chili stir-fry sauce:

  •  any favorite jar of sweet chili sauce
  •  low sodium soy or tamari sauce
  • corn starch
  •  cold water
  • full printable recipe with amounts below

Directions:

  1. In a large nonstick fry pan, add butter or oil to pan over medium heat and toss in corn, peas, and grated carrot along with one bag of thawed cauliflower rice. Saute until hot. Let the cauliflower start to get a little color then take off heat, pour onto a serving plate and cover with foil to keep warm.
  2. Using the same pan, add olive oil and heat on medium. Toss in shrimp. Cook for about 2 minutes. Grab your jar of sauce and shake it up baby! Now, pour over shrimp. Cook for about 1 minute or so until you have a bubbling mixture. The sauce should now be nice and thicken.
  3. Grab the serving plate and spoon the shrimp over the cauliflower rice. Serve up!

Ingredients
