Shortcut Homemade Bruschetta

This simple recipe tastes just like you would find at any fine restaurant and is full of freshness and so, so easy to prepare anytime. Enjoy the deliciousness!

 

One of my most favorite appetizers to order when eating out is bruschetta. So many restaurants serve it nowadays. It’s usually served on crusty bread like a baguette, Italian or French bread. Even on crackers. A few times someone in my family has ordered bruschetta chicken. It was really delicious. So delicious, I had to copy it at home. I used the instant pot for ease and convenience.  Here’s the link for Instant Pot Chicken Bruschetta I love anything made with fresh vegetables and of course garlic.

 

This is the most simple throw together recipe. That’s why I call it a shortcut recipe. Since tomatoes are the star in bruschetta I use cherry or grape tomatoes for their sweetness and since you can find these in your local market all year round, you’ll be able to make this wonderful recipe whenever you want to.  Also, I used a real shortcut. Check out the recipe and see what I’m talking about. It’s my new favorite find and I love it so much, I got a bunch of my friends and family to use these products as well. So great in many recipes. Make yourself some fresh bruschetta soon. It’s freshness at it’s best. 

Shortcut Homemade Fresh Bruschetta 

Yields: about 4 servings

Nutrition: calories 107, fat 10.5 g, sat fat 1.5 g, carbs 3.7 g, sugars 1 g, fiber 0.5 g, protein 0.6 g

Ingredients:

  • 2 cups grape or cherry tomatoes or a combo, sliced in half or if small leave whole
  •  1/4 -1/2 small red onion chopped finely
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tbsp good quality balsamic vinegar
  • 2 cubes frozen crushed garlic, I used Dorot or 2 garlic cloves crushed
  • 2 cubes frozen crushed basil, I used Dorot, you can add another cube of each to taste or, 1/4 cup fresh basil minced
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper or to taste for both salt and pepper
  • 2 to 3 tbsp fresh parsley, chopped

Both of these tomatoes are sweet like sugar and just perfect in this recipe 

Directions:

  1. First thing, pop the cubed garlic and basil out and place in microwave for about 10 to 15 seconds to soften up. The aroma! Set aside.
  2. Cut tomatoes and place in serving bowl.
  3. Add remaining ingredients and toss gently. Add in garlic and basil. Toss again. Taste test to see if more salt is needed. Serve on your favorite toasted bread, chicken, fish or anyway you can think of. Can be stored in fridge up to 2 days.

Here’s another way we enjoyed this homemade bruschetta. Spread some hummus on some nice thick bread, you can toast it or not. Then layer the bruschetta over the hummus. Best lunch ever.
