Shortcut Chickpea Salad

 This shortcut chickpea salad is so full of great flavors and textures. Perfect for lunch or dinner. It’s hearty enough for a main meal. You won’t miss the meat after biting into this tasty salad. Make one up soon and enjoy!

 

I probably can eat a salad every single day.

Love the versatility and all the great textures.

Here’s one of my favorites. See how easily I make this one with a great shortcut method.

Since I work from home, it’s easy for me to make something for myself and stop for a little while to sit down and eat lunch.

However, I’m still on a time crunch. I like to get all my work done before my son gets off the bus.

Whenever I can find shortcuts for any meal, that’s a bonus.

The packaged salads in the markets are the perfect way to speed things up by not having to cut up the lettuce in a salad.

The packaged coleslaw and shredded carrots are also a good time-saver. This way I can throw in any add-ins that I’m in the mood for that day.

If you haven’t tried hempseeds yet, pick up a small bag to start. These little gems taste a little nutty and so fragrant. On top of that, they are incredibly healthy.

I also included an easy and oh so tasty dressing for this or any salad. It’s below the salad ingredients.

Simple Hemp Seed Chickpea  Salad

Yields: 2 main course salads

 

What you’ll need to make this healthy and delicious salad…

Ingredients:

  • 1 bag chopped greens of choice, I used Kale, Brussels Sprouts and other mixed lettuces. Or, 6 cups chopped mixed lettuce of choice. I used one mixed with shredded carrots
  • 2-3 tbsp hemp seeds, easily found at most markets, I got mine at Trader Joe’s
  • 1 cup canned chickpeas, drained, rinsed and dried slightly
  • 1/4 cup walnuts or any nut of choice, chopped coarsely
  • 1/8 cup dried cranberries or raisins
  • 4 tbsp toasted pumpkin seeds
  • 1/2 – 1 whole avocado, chopped

Simple Dressing:

  • 2 tbsp olive oil
  • 2 tsp fresh lemon or lime juice
  • 1 tsp honey
  • a few teaspoons cold water if needed
  • sea salt and pepper to taste

 

 

 

There’s only four steps to this recipe and that includes the dressing…

Directions:

  1. Place chopped lettuce between two dinner plates.
  2. Top with cranberries, walnuts and pumpkin seeds.
  3. Sprinkle hemp seeds on top of each salad then finish with chickpeas.
  4. In  mason jar, add olive oil, lemon juice, honey, water, and salt and pepper.  Shake well then pour over each salad. Done and delicious!

  • 4 tbsp toasted pumpkin seeds

  • a few teaspoons of cold water if needed
