Pear Coffee Cake

This pear coffee cake recipe is from many years ago when I started catering in Atlanta.

I made this cake many times for luncheons and brunches.

So Simple for anytime of the week, for breakfast and dessert…

Its light and not too sweet, but is also so satisfying and great with a cup of coffee or tea while relaxing. I make this pear coffee cake for breakfast, brunches, and dessert.

A lovely pear coffee cake to serve for company…

As you can see in the picture, this pear coffee cake displays beautifully and your friends and family will think it took so long to make when its actually one of the easiest recipes (this can be our secret).

Add a quick glaze for a sweeter dessert…

Just mix 1/4 cup powdered sugar or sugar substitute (must be powdered or confectionary sugar) with either 1 to 3 teaspoons of cold water, milk, or half and half. Mix until nice and smooth. Drizzle over the top of a cooled or almost cooled cake. 

 

Pear Coffee Cake

Yields 8 slices

Nutrition: calories 145.2, fat 4.4 g

 

Ingredients:

  • 1 3/4 cups Original Bisquick or Heart Smart Bisquick mix
  • 1 16 ounce can pear halves in its own juice or water, drained
  • 1/2 cup granulated sugar or sugar substitute, coconut sugar and date sugar work well too
  • 1 teaspoon granulated sugar
  • 4 tablespoons unsalted butter, softened to room temperature or almost melted
  • 3/4 cup milk of choice, dairy, oat, almond, soy, they all work for this recipe
  • 1/2 cup baby food — pears or applesauce
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 egg white or, you can use a whole egg

 

Directions:

  1. Preheat oven to 375 degrees, spray an 8 inch non stick round baking pan with cooking or baking spray and set aside until ready to fill.
  2. On a cutting board, slice the pears into thin slices. Set aside until the end.
  3. In a large mixing bowl, add all the ingredients except for the pears, 1/2 teaspoon of the cinnamon and 1 teaspoon of the sugar (this will be used later to sprinkle on the top of the cake) and mix until blended. I use a rubber/silicons spatula. Make sure you get all the dry mix from the bottom all mixed in, but do not over mix. Let sit 5 minutes on the counter.
  4. Now, pour the batter into the prepared pan. Spread evenly with the spatula. Arrange the pears in a circular pattern on top of the batter. Sprinkle the 1 remaining teaspoon of cinnamon and 1 teaspoon sugar over the top of the cake.
  5. Bake about 30 – 40 minutes or, until golden brown; check after 30 minutes and use a wooden skewer or toothpick, to check. Should come out clean or with dry crumbs. While baking, turn the pan around after 15 minutes for even baking. Serve warm or room temperature and enjoy this wonderful cake!
