
This light as air pear coffee cake is a beautiful looking coffee cake that's so simple to prepare and tastes oh so light and delicious. Bake one up and enjoy!
Preheat oven to 375 degrees, spray an 8 inch round pan with cooking or baking spray and set aside until ready to fill.
On a cutting board, slice the pears into thin slices. Set aside until the end.
In a large mixing bowl, add all the ingredients except for the pears, 1/2 teaspoon of the cinnamon and 1 teaspoon of the sugar (this will be used later to sprinkle on top of the cake) and mix until blended. I use a rubber spatula. Make sure you get all the dry mix from the bottom all mixed in, but do not over mix. Let sit 5 minutes on the counter.
Now, pour the batter into the prepared pan. Spread evenly with the spatula. Arrange the pears in a circular pattern on top of the batter. Sprinkle the 1/2 teaspoon remaining cinnamon and 1 teaspoon sugar over the top of the cake. Bake about 30 – 40 minutes or, until golden brown; check after 30 minutes and use a wooden skewer or toothpick, to check. Should come out clean or with dry crumbs. While baking, turn the pan around after 15 minutes for even baking. Serve warm or room temperature and enjoy this wonderful cake!
