Mint Chocolate Chip Baked Donuts

These mint chocolate chip baked donuts are fun to make and they come out so delicious. Bake some soon and enjoy the chocolate minty yumminess!

Since St. Patrick’s Day is next week, that means it’s time to start planning what sweet treats to have ready after dinner.

  One thing’s for sure, I will be making my Old-Fashioned Corned Beef and Cabbage recipe that will be simmering away in the slow cooker all day and making the house smell divine.

But, then comes the fun part, a St. Paddy’s Day dessert and/or desserts.

My mint chocolate chip baked donuts are always a hit and I seriously can’t keep them around long enough. That’s how fast they disappear. I find baked donuts are very simple to make and they come out just like a fried donut without the extra oily taste.

Dipped in a decadent chocolate ganache and topped with dark chocolate chips, the donuts have just a hint of mint for the perfect balance.

The best part, you don’t have to wait until St. Patrick’s Day to enjoy these. You can omit the green food coloring and they will still be chocolate covered mint donuts. 

Why Bake The Donuts Instead Of Frying Them?

The reason for a  baked donut recipe is because I feel there’s no need for all the extra oil when you fry the donuts.

Frying donuts is way more involved than baking them, not to mention less healthy.

Also, these baked donuts just taste better. They have a moist and cakey texture and seriously come out delicious every time. I hope you try this recipe. I have a bunch more baked donut recipes, I will post the links below. 

Mint Chocolate Chip Baked Donuts

Yields: 8 Donuts

 

What you’ll need to make a batch of these mint chocolate chip baked donuts…

Ingredients:

  • 2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1 cup mini semisweet chocolate chips
  • 2 teaspoons baking powder, make sure the baking powder is fresh
  • 1/2 teaspoons fine sea or kosher salt
  • 3/4 cup whole milk
  • large eggs
  • 2 tablespoons unsalted butter, melted and cooled slightly
  • 1 teaspoon pure peppermint extract, not mint extract for this recipe
  • -4 drops mint green food coloring

For the chocolate ganache:

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy whipping cream
  • 1/4 cup mini semisweet chocolate chips

How are these mint chocolate chip baked donuts made…

Directions:

  1. Preheat oven to 350 degrees. Spray a donut pan with cooking or baking spray.
  2. In a large mixing bowl, combine flour, sugar, baking powder and salt. Whisk to combine.
  3. In another large bowl, whisk together milk, eggs, butter, and peppermint extract. Then, add in the drops of food coloring. Whisk again to combine.
  4. Gradually mix in the dry ingredients into the wet until combined. Add more drops of green food coloring if needed to desired green color.
  5. Fold in the mini chocolate chips.
  6. Either scoop into disposable piping bag, cut the tip off and pipe batter into the donut cavities or spoon batter into donut wells with a teaspoon or mini cookie scoop.
  7. Bake in the oven for 10-12 minutes or until slightly golden brown.
  8. Remove from oven and allow to cool on wire rack for 5 minutes in donut pan.
  9. Invert donuts onto the wire rack to cool completely.

Directions to make the chocolate ganache:

  1. Using a small pot, heat the heavy whipping cream until steaming or little bubbles. Don’t let the cream boil.
  2. While heavy whipping cream is heating up, place chocolate chips into heat-proof bowl.
  3. Once the heavy whipping cream is heated, pour over the chocolate chips.
  4. Allow to sit for 1 minute before whisking until smooth. Whisk until the chocolate looks shiny.
  5. Either pour over the donuts or dip each donut into the melted chocolate.
  6. Allow ganache to set for just a couple of minutes before sprinkling on the mini chocolate chips.
  7. Let donuts set up before serving. 
  8. Recipe Note: You may get up to 10 donuts in your recipe. I would suggest after filling the donut pan and seeing you have extra batter, bake the first batch. While the batch is cooling on the wire rack, clean out each well with a dry paper towel, spray the wells again then fill until batter is finished. You should get between 8 and 10 donuts.
